At 12 months, he was diagnosed with Mast Cell Activation Syndrome (MCAS), High Histamine Intolerance, and severe food allergies. By 15 months, he began a tailored Ancestral gut healing diet aimed at reducing inflammation, stabilizing mast cells, and promoting gut health, with guidance from our Nutritionist, @mypropernutrition_ Environmental Factors: We focused on minimizing environmental triggers: - 100% cotton clothing, bedding, and plush toys - Filtered drinking and bath water - Using vinegar and water for cleaning - Homemade washing powder - Ensuring close contacts avoid makeup and chemicals Understanding MCAS and Histamine Intolerance: - MCAS: Inappropriate mast cell activation causing symptoms like hives and gastrointestinal issues. - Histamine Intolerance: An imbalance between histamine intake and the body’s breakdown capacity, leading to similar symptoms. Bone broth is highly nutritious but with histamine intolerance, it’s a disaster. When I first gave my son bone broth, he had a massive eczema flare. I contacted his naturopathic doctor and she said “I think he has histamine intolerance”. It made sense - the eczema, hives, red skin, digestive issues, sensitivity to bananas, avocados and tomatoes. Fast forward four years, I’ve healed his histamine intolerance through diet and now I am helping others do the same. Everything happens for a reason.  While bone broth is out, meat stock is a great alternative. Meat stock is made by cooking raw meat attached to the bone, with water and vegetables. The best cuts are where bone connects to bone. Think neck, knuckle, shank, oxtail, shin, wings, drumsticks, feet, trotters. These are high in collagen & connective tissue, making the most healing stock. Meat stock needs to be cooked until the meat falls off the bone - chicken - 2 hrs, beef - 3-4 hrs. I learned about stock while on GAPS + from @groundedapproach and @wildnutritionist and it was a game changer for me when I was healing my son of histamine intolerance. I made it in a pressure cooker, strained it, shredded the meat, put meat and stock into containers,froze it and reheated it as needed. It made giving him healing stock and meat protein so easy. When his histamine intolerance improved, I switched from pressure cooking to a stove pot like this and this is how I have been cooking it ever since.   Ingredients: 1 x 750g un-aged beef oxtail  1 x 500g un-aged beef shin  1 x onion, peeled, chopped  1 x carrot, peeled, chopped  2 x celery sticks, chopped  2 x bayleaves  6 x peppercorns (use pink peppercorns if you are extremely sensitive to histamine) 1 x pinch of salt  Method:  1. Put ingredients in a pot, add filtered water until it covers meat & bring to the boil.  2. Boil for 5 minutes until you see a brownish foam on the liquid. Skim this off.  3. Turn the heat down and simmer on low for 3-4 hours until the meat falls off the bone.  4. Strain the stock & pour into individual containers. 5. Shred the meat & add to the stock 6. Freeze immediately  NB: if cooking in a pressure cooker, cooking time is 1-1.5 hours.

It’s a histamine clearance problem that shows up during sleep. Here’s the sequence: • Cortisol drops around 2 AM as part of your normal overnight rhythm • Histamine, which your brain uses to stay alert and awake, rises to fill that gap • An enzyme called HNMT is responsible for clearing histamine inside brain tissue and the central nervous system • HNMT requires SAM, a methyl donor, to function. MTHFR variants reduce how efficiently your body produces it • Less SAM means HNMT clears histamine more slowly, so it accumulates in the brain overnight instead of quieting down There’s a second layer too. DAO, a separate enzyme, handles histamine in your gut and bloodstream. When gut-derived histamine spills into circulation, it adds to the total load your system is already struggling to manage centrally. Both enzymes. Both methylation-dependent. Both slower when MTHFR is in the picture. A few things that actually help: • Avoid high-histamine foods in the evening, leftovers, aged cheese, wine, canned fish all raise the load before bed • 400-600mg magnesium glycinate at dinner helps calm mast cell activity and supports sleep depth • 1,000mg vitamin C before bed supports both DAO and overall histamine clearance • Consistent protein at dinner stabilizes blood sugar overnight and reduces cortisol spikes that compound the problem What doesn’t help: melatonin, more magnesium, or sleep meditations if histamine is the actual driver.
