This one’s for you @stanleytucci ! 🙌 This beautiful pasta dish from Nerano on the Amalfi Coast is one of Stanley’s favourites for a good reason! All you need is a few simple quality ingredients to make something truly delicious. This is my version of Spaghetti alla Nerano. The deep-fried courgette with the fresh basil, cheese and delicious garlic oil make for a beautiful rich, creamy pasta. Traditionally it’s made with provolone del Monaco but this is tricky to find so I’ve used a combination of pecorino and Grana Padano cheese. And if you want to make it vegan, just leave out the cheese, add a squeeze of lemon juice towards the end and top it with aromatic pangrattato. This is Italian cooking at its very best and is perfect for this time of year. You have to make this one! But in Tuscany, especially around Florence, this day has a very specific smell: warm oil, sugar, and fresh frittelle. Frittelle di San Giuseppe are one of the most traditional Italian desserts, deeply rooted in Tuscan cuisine and Italian cultural heritage. In Florence, Saint Joseph is often called San Giuseppe frittellaio, Saint Joseph the fritter maker, because of this long standing tradition of making fried sweets to celebrate the day. Full recipe below! 🇮🇹❤️ 👇 Let me know if you love comfort food like this 👉 Save this recipe 👉 Share it with a pasta lover 👉 Follow for authentic Italian recipes, TV demos & family classics Pasta Piselli Ingredients: 12 oz of ditalini 12 oz peas (fresh or frozen) 6 oz pancetta, diced 1 medium onion, diced ⅓ cup grated Parmigiano Reggiano Olive oil, qb Salt & black pepper, qb Instructions: Dice onion and pancetta. In a pot, heat olive oil and sauté until golden, 5–7 minutes. Add peas, stir, and cook 2–3 minutes. Cover with water (about 1 inch above mixture), season with salt and pepper, bring to a boil. Add pasta directly into the pot and cook until al dente, stirring often. Adjust water if you want it more brothy or more dry. Fold in Parmigiano, adjust seasoning, and serve.

My first lingue di pizza video hit over 2 million views, so here’s a higher-protein version made with Greek yogurt 🤍 I am not comparing this to a steak……but the OG is just flour and water, so this ups the protein 6 grams per pizza tongue 👅. It’s got that same addictive crunch, just a bit more protein! No yeast, no rise time, and SOOO good. Gluten-Free Lingue di Pizza with high protein yogurt Ingredients 250 g (2 cups) gluten-free flour 260 g (1⅓ cups) high-protein Greek yogurt OR whipped cottage cheese (you may need slightly more or less depending on your flour; they are all different) 10 g (1 tbsp) sea salt 15 g (2 tbsp) olive oil Cornmeal, for dusting To top Passata Olive oil Oregano Salt, optional Preheat oven to 475°F. Line a tray with parchment and drizzle with olive oil. Combine everything in one bowl (or a stand mixer) and knead until smooth. Divide into 6 pieces. On a surface dusted with cornmeal, roll them out very thin into long “tongues.” Arrange on the tray, top with passata, olive oil, oregano (and salt if you like). Bake at 476F for 20–25 minutes or until very crispy. This style (NO CHEESE - but you can add it on yours) is everywhere in Italy right now. It is simple and ALL about good quality ingredients.
