Had to turn my viral baked lasagne jacket into a tray bake for four … because one potato simply isn’t enough when comfort food calls 🥔😂 This is a take on my baked lasagne style jacket potato — just bigger, better, and perfect for feeding four instead of one. Fluffy crispy jackets. Rich leftover Bolognese. Creamy cheesy béchamel. Finished with a golden cheese melt. Would you share this… or keep the whole tray to yourself? 👀 ⸻ 🥔 Lasagne-Style Jacket Potato Tray Bake Serves 4 Ingredients Jackets • 4 large baking potatoes • Olive oil spray • Sea salt & black pepper • 40g garlic butter Filling • 600–700g leftover Bolognese sauce Cheesy Béchamel Sauce • 40g butter • 40g plain flour • 500ml semi-skimmed milk • Black pepper • 100g mixed grated cheese • 30–40g grated Parmesan For layering • 150–200g mozzarella or mixed cheese • Extra Parmesan for topping ⸻ Method 1. Cook the jacket potatoes Pierce potatoes, rub with olive oil and salt. Air fry at 180°C for 45 minutes, then another 10 minutes until crispy. Oven option: 200°C for about 1 hour until fluffy inside and crunchy outside. ⸻ 2. Make the cheesy béchamel Melt butter in a pan over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in the milk until smooth and thickened. Season with black pepper, then stir through mixed cheese and Parmesan until melted and creamy. Set aside. ⸻ 3. Assemble the tray bake Place all 4 crispy jackets into a large tray. Slice open and gently mash the centres with butter, salt and pepper. 👉 Spoon 1 tablespoon of béchamel into each potato and mix through the fluffy middle. Now layer in this order: • Add the leftover Bolognese • Pour over more béchamel sauce • Sprinkle over mozzarella or mixed cheese • Finish with a generous grating of Parmesan ⸻ 4. Final melt Bake at 180°C for 10–12 minutes or air fry at 180°C for 4–5 minutes until golden, bubbling and irresistible. ⸻ #jacketpotato #SuperHomeCook #lasagna #comfortfood #jacketpotatoes 🥔❤️

JACKET POTATO CHEESY CHILLI BAKE 🥔🌶️ 450 CALS + 45g PROTEIN One of my faveee easy meal preps. The perfect Sunday comfort food meal prep as you can make one big chilli, have some for dinner and the rest for meal prep. HIGH PROTEIN CHILLI (8 MEALS) 🌶️💪 Ingredients • 1kg 5% beef mince • 1 onion • 2 red peppers • 2 tins chopped tomatoes (400g each) • 400g kidney beans (drained) • 2 tbsp tomato purée • 2 handfuls mozzarella Spices • 2 tsp chilli powder • 2 tsp smoked paprika • 1 tsp cumin • 1 tsp oregano • 1 tsp garlic powder • Salt & pepper Method: •Add chopped onion + peppers to a pan and cook 5–7 mins. •Add the beef mince and cook until browned. •Stir in tomato purée and all spices. Cook 1–2 mins. • Add chopped tomatoes, kidney beans and 200ml water. •Simmer 25–30 mins until thick. •Divide into 8 portions. I split 6 onto cooked jacket potatoes and topped with mozzarella, then baked for 15 minutes. Bigger, cheesier and honestly unreal 🤤 If you love comfort food like this, type BOOK and I’ll send you the link to pre-order my debut cookbook—loads of recipes just like this in there 🤍 ⸻ 🥔 Hunters Chicken Jacket Potato Tray Bake (Serves 4) Jacket Potatoes • 4 large baking potatoes • Olive oil • Sea salt Chicken • 3 chicken breasts, diced • 1 tbsp paprika • 1 tbsp BBQ seasoning • 1 tbsp adobo complete seasoning (or Knorr All Purpose) • 1 tsp chicken stock powder • 1 tsp garlic powder • 1 tsp onion powder • 5–6 tbsp honey BBQ sauce (e.g. Sweet Baby Ray’s) • 4 tbsp water • Small handful smoked bacon bits (or 2 rashers, finely chopped) Cheese Sauce + Filling • 50g butter • 50g self-raising flour • 400–450ml milk • 120g mature cheddar • 80g mozzarella • 80g Red Leicester • Extra 100g mixed cheese (for stuffing + topping) Method 1. Pierce potatoes, rub with oil & salt, wrap in foil and air fry at 180°C for 1 hr 10 mins. Unwrap and cook 10 mins more until crispy. 2. Season diced chicken with all dry seasonings. Fry until browned, add BBQ sauce, water & bacon, then simmer until thick and cooked through. 3. Melt butter, stir in flour, then whisk in milk. Add cheeses and stir until thick and creamy. 4. Place potatoes in a tray, cut a cross, fluff inside, add butter, salt & pepper and a handful of cheese. 5. Spoon chicken over each, pour over cheese sauce, add extra around the tray, then top with more cheese. 6. Air fry or bake for 3–5 mins until golden and bubbling. 7. Finish with a drizzle of BBQ sauce and serve hot. Cheesy, saucy, crispy… proper comfort food 🤤🔥 #superhomecook #jacketpotato #potatorecipes #jacketpotatoes #hunterschicken
