FOODS FOR HEALTHY DETOX - if you want to support healthy detox this January think of the foods that you are eating. First of all we want to nourish our gut microbiome. Did yo know that they help us detoxify and liver foods like artichokes, contain silymarin that is great for liver health, asparagus is a liver supportive food and also one of the highest food sources of glutathione our major antioxidant and leek and beans are great prebiotics. This is simple, warming and so delicious: Ingredients: 3 large garlic cloves chopped or 6 small ones 1/2 tsp chilli flakes Rind of one lemon 8 sprigs of thyme 1 leek finely chopped 6 artichoke hearts ( I used a can, most cost effective way and nice and soft) 1 packet of asparagus (I used 8 spears) 1 570g tin of butter beans with the liquid 100ml stock Drizzle of kefir once it has cooled down Add a glug of EVOO to a dish and as it heats up add your garlic, lemon rind, thyme and chilli. Once heated add your leek and let it soften as little and get little colour (5 mins) To this then add your finely sliced artichokes, asparagus and beans. Sautee for a couple of minutes and then add your beans and stock. Simmer on low for 5 mins. Let it cool and when ready to serve drizzle over your kefir (don’t add it to this hot or you will loose those good microbes).
