Achari Arbi Papdi Chaat This Holi I have made this healthy Achari Arbi Papdi Chaat, with the tang of @enginebrand.in Mango Pickle and the use of Refined Groundnut oil. Recipe: 250 gms Arbi, boil and peel the skin 2 tbsp Groundnut oil Half tsp jeera 1 tsp ginger garlic powder 1 tsp garam Masala 1tbsp Mango pickle In a pan, add oil, jeera,add chopped Arbi and saute. Add ginger garlic powder, pickle,garam Masala and let it saute,and let it start getting roasted,no need to add salt. Put this in a bowl, add chopped coriander and chopped onions ,mix and keep aside. In a bowl, add 1 cup flour, salt, 1 tbsp ghee, little ajwain, and knead a dough,keep aside for 15 minutes. Roll into small Papdi, prick with a fork. Heat Groundnut oil and fry till crisp. A popular traditional North Indian sweet which is a must to make especially during the Holi festival. . In this recipe i have used groundnut oil from @enginebrand.in . Holi special - Mathri Chaat in association with @enginebrand.in Ingredients Plain Flour : 1½ cup Seasoning masala Water : ½ cup Salt to taste For Starch paste: Ghee : 2 tbsp Corn starch : 2 tbsp Peanut Oil from @enginebrand.in for frying Method: In a bowl, add Flour, salt and seasoning Mix it well. Add water slowly and make a soft dough. Divide the dough into similar portions according to the number of pleats you want Take a bowl to make paste. Add melted ghee and corn starch and mix it well. Roll all the small balls as thin as possible. Then take one sheet and spread the  mixture on the surface and place another sheet on it.  Similarly apply mixture and place other layers. Do not apply Satha on the last one. Repeat it with All the rotis Similarly repeat the process and roll all the colours. Take the roll and roll it out by hand. Cut it into 1 inch pieces. Take the piece and roll it thick using a rolling pin. When the oil is hot, fry them individually. Keep stirring the oil & fry them well. For the dip - Take equal amount of hung curd in 3 different bowls. In one add green chutney & mix , in the second bowl add Beetroot puree, chaat masala & a lil sugar.In the 3rd bowl add some Dhokla and grind it. Strain all the 3 dips & serve as shown in the reel.Sprinkle some bhujia over it. Ingredients: 1 cup boiled choliya 2 tbsp besan 1 finely chopped onion 1 tsp chaat masala 1 green chilli chopped fine 1 tbsp ginger garlic paste 1/4 tsp red chilli powder 1/2 tsp garam masala Salt as per taste Mustard oil for cooking Whisked yogurt , mint and tamarind chutneys for assembling chaat Pomegranate arils and sev bhujia for garnish Instructions: mix together ingredients to make a tikki. I used Natural colours spinach ,haldi powder and beetroot to make papdis 💚💛❤️ This papdi Chaat plate sprinkled with chaat masala , black salt and jeera powder is all you need for your Holi celebrations so do try it out . They have enjoyed a lot 😊 So, try this simple recipe for the upcoming Holi--the festival of colors--and enjoy with your loved ones. This time, I used cold pressed mustard oil from @enginebrand.in in this recipe. It turned out so well that everyone in my family enjoyed the taste. As a Bengali, we love to use mustard oil in our daily recipes, whether it's for fish, vegetables, or non-vegetarian dishes.
