DMIt was such a pleasure to have our Tea Sommelier @sitimahdaria host the Autumn Tea Business School Matcha Class 🍵
Students compared 10 different matcha from Kyoto, Kagoshima, Yame, and Shizuoka; tasting them as Usucha and Latte. Through this, Ria showcased the unique beauty of each matcha and how their aroma and flavor transform depending on the way they are served.
We loved seeing all the “aha!” moments during her explanations! Students also explored how different types of chasen and brewing methods affect the final cup, and even had fun creating refreshing matcha mocktails.
A truly eye-opening (and delicious) session!

NEMatcha Water ratio go-to aku :
• sifted 3 gr matcha / 50 ml / 60 C
• 100-120 ml room temp water
• big slow dilution ice cube - bikin pakai silicon mold 4x4x4
Biasanya matcha udah keburu habis duluan sblm es fully diluted. Kalau mau tanpa es, bisa pakai 120 ml air hangat / dingin dispenser. Tergantung suasana hati aja mau hangat atau adem.

JUHOW to taste matcha 😛 here are tips I wish I had starting out 🌱👇🏽
1️⃣ Go beyond flavor. Matcha is a full sensorial experience: aroma, mouthfeel, and how long it lingers matter just as much.
2️⃣ No wrong answers. Taste is subjective, rooted in our experiences with food, culture, even memories. What feels floral to one person might read nutty to another—both are valid.
3️⃣ Taste widely. Start with first harvest matcha and explore other Japanese teas, cultivars, tea growing prefectures and tea growing countries. Ask yourself: do you prefer umami-rich, grassy-bright, or soft and sweet? You’ll only know by trying.
4️⃣ Stay objective. It’s easy to take a creator’s tasting notes as truth, but taste is personal. Their lens is just one perspective, what matters is what you notice. You can use their references and opinions as a guide, but challenge yourself to hone in on flavors you pick up on.
5️⃣ Expand your flavor dictionary. Try new fruits, herbs, and veggies (I love farmers markets for this).
6️⃣ Taste it straight. To capture nuance, try usucha (just matcha + water). First harvest matcha is delicate!
❌ DON’T add milk or sweeteners these mask subtleties and can overpower the matcha. Once you taste it unadulterated, DO YOU and prepare it however you enjoy.
7️⃣ Control your variables. Same amount of powder, same amount of water, water temp, and format when comparing brands keeps it fair. A tea scale helps in this instance.
8️⃣ Technique matters. Smell first, then sip and aerate (like pulling in air through a straw). This coats your palate so you notice flavor, mouthfeel, and astringency. Pay attention to what lingers.
9️⃣ Have fun! Developing your palate takes time. Yours will always be unique, celebrate that and enjoy the process. Continue experimenting with extracting flavor profiles of foods you eat at restaurants, coffee, cocktails/mocktails, chocolates, etc.

ADTrying out the 2nd highest matcha grade of Nakamura Tokichi, Hatsu no Mukashi !
Spoiler alert: It’s one of my favorites from this brand apart from Fuji no Shiro
🍵 Usucha
Initial sweet notes followed by rich moderate umami, almost broth-like, really delectable to the tastebuds. It did have some toasted nuts taste but it wasn’t really prominent. Do note there is very minimal astringency to round off the profile into a cohesive whole.
One thing that I love about this matcha is I equally enjoyed it both in iced and warm usucha. When iced, its umami and sweet nutty notes transforms into a smooth and refreshing drink in good spirits; and when warm, the savory profile was comfort in a bowl, a hug you can taste.
🍵 Latte
It was a pleasant surprise when I realized the rich umami notes didn’t get washed away by the milk as most other high grade matcha. It goes really well unsweeteened with the toasted nuts complimenting the creamy oat milk.
