What you need:
- cooked einkorn pasta
- roasted carrots
- roasted brussel sprouts
- roasted mushrooms
- plant-based Abbots ground beef
- microgreens
- green goddess dressing (blend: 1 avocado, 1/4 cup plain vegan yogurt, 1/3 cup avocado or olive oil, 1/4 cup lemon juice, 1 clove garlic, 2 tbsp walnuts, 1/4 cup fresh parsley, 1/2 cup fresh basil, 1/4 cup fresh cilantro, 2 tbsp fresh chives, 1 tsp dijon mustard, 1 tsp salt, pinch of black pepper)
1. Prep all of the veggies and add them to a sheet pan and roast with olive oil, salt pepper garlic, for 25-30 minutes at 350F until they are all golden and tender.
2. Cook the pasta and strain.
3. While pasta cooks, make the green goddess dressing in a blender.
4. Add everything to a bowl and top with green goddess dressing.
5. Enjoy!!
