CLLa differenza tra cappellacci e cappelletti l’ho imparata qualche anno fa. Ricordo perfettamente quella giornata: eravamo immersi nei preparativi per il menù di Natale nel ristorante a Imola per cui ho lavorato. Ogni dettaglio doveva essere impeccabile, e io ero alle prese con i cappelletti, un formato di pasta che richiede una certa manualità edeleganza nella chiusura, quella famosa forma a “cappello”.
Non era la prima volta che li preparavo, ma quel giorno il mio capo partita sembrava intenzionato a farmi raggiungere una precisione assoluta. Ogni mio tentativo veniva osservato e corretto. “Così non è un cappelletto” mi diceva, “se non ha la forma giusta, diventa un cappellaccio!” e me lo mostrò, con quella chiusura più morbida e ampia, tipica della tradizione ferrarese.
Mi spiegò che il cappellaccio di zucca, con il suo ripieno dolce e avvolgente, è il simbolo della cucina emiliana, mentre il cappelletto richiede una chiusura più elegante e precisa, perfetta per custodire un ripieno compatto. Non si trattava solo di tecnica: c’era una filosofia dietro ogni forma. Il cappelletto parla di armonia e rigore, il cappellaccio di accoglienza e semplicità.
Dopo qualche tentativo in più – e con i suoi consigli sempre più mirati – sono riuscita a dare ai cappelletti la forma giusta. La soddisfazione di vedere quella perfezione nelle mie mani è stata enorme.
Oggi sono uno dei formati di pasta fuori dalla mia tradizione che più mi diverto a fare. E mangiare!

CH⬇️ How to make Cappellacci dei Briganti.
📕 Golden pasta dough:
• 200g (7 oz) 00 flour
• 175g (6.17 oz) egg yolks
• 1 tsp salt
Instructions:
1. Make the dough and let it rest, wrapped in plastic wrap, for at least 30 minutes.
2. Roll out the dough to 1.5 mm thick and cut it into circles about 12 cm (4.7 in) in diameter.
3. Cut the pasta circles in half, then pinch the opposite sides together and fold the base to make your Cappellacci dei Briganti.
🔔 Secret tip: Allow the dough to rest in the fridge overnight to hydrate it more, which will make it more elastic and easier to shape.

LUMaking less than traditional cappellaci di zucca for myself. So grateful for all that I have so I snuck some of my favorite things into this reel.
I brought back some amazing mostarda di mele from Montova from my last trip in Italy. Couldn’t wait to break it open and use it in the filling. The best pumpkins in America for this kind of filling are blue Hubbard and koginut. Both of which if baked slowly will produce a drier, starchier consistency perfect for ravioli filling that’s also not too sweet.
A little amaretti balances out the mostarda and the dish is finished with some salumi from my pals @golferausa and of course the pasta is always made with the finest @molino_pasini flour!
