15 MINUTE CREAMY THAI COCONUT COD CURRY Creamy, fragrant and properly speedy. The cod steams gently in the curry sauce to become perfectly flakey and gorgeous.The PERFECT midweek meal. Serves 2 at approx 490kcal & 26g protein per portion 1 pack microwave brown rice 1 carrot 1 courgette 2 cod fillets (or any protein of choice) 1 tin light or full fat coconut milk 1 tbsp red curry paste 2 spring onions 1 tsp honey 1 chicken stock cube 1 tsp fish sauce 1 tsp soy sauce Lime & Crispy chilli oil to serve Dry the cod and salt. Add the light coconut milk, red curry paste, spring onions, honey, stock cube, fish sauce and soy sauce to a blender and blitz until smooth. Julienne the carrot and courgette, or peel into ribbons. Add the rice to a wide pan, top with the veg, then place the cod on top. Pour the sauce over. Put the lid on and simmer gently for 8–10 minutes, until the cod is cooked through and flakes easily. Serve with a squeeze of lime and a drizzle of crispy chilli oil.

Vegetables: 1 lb cherry tomatoes (halved), ½ medium red onion (thinly sliced), and 3–4 cloves of garlic (crushed or minced). Briny Elements: ½ to 1 cup olives (Kalamata or mixed Mediterranean) and 1–2 tbsp capers. Liquids: 3–4 tbsp extra virgin olive oil, juice of 1 lemon, and optional 2 tbsp melted butter or white wine. Seasoning & Herbs: 1 tsp dried oregano, 1 tsp paprika, salt, and black pepper to taste. Garnish with fresh parsley or dill. Instructions Preheat & Prep: Heat your oven to 400°F (200°C). Lightly grease a large rectangular baking dish with olive oil. Season the Cod: Pat the fish fillets dry with paper towels to ensure better seasoning. Place them in the baking dish and drizzle with half of the olive oil and lemon juice. Season both sides with paprika, oregano, salt, and pepper. Assemble Toppings: Scatter the cherry tomatoes, sliced red onion, garlic, olives, and capers around and on top of the fillets. Drizzle the remaining olive oil over the vegetables. BEST DAMN CRISPY AND FLAKY COD INGREDIENTS 2 cod fillets about 1-inch thick. Thawed, if using frozen 1 Tablespoon Extra virgin Olive oil or Avocado oil ½ teaspoon Salt to taste ½ teaspoon Pepper to taste 1 Tablespoon Seasoning I used Old Bay seasoning. You can also try it with lemon pepper seasoning, or cajun spice. INSTRUCTIONS Prep cod fillets: Brush both sides of the cod fillets with oil or melted butter and season it with your preferred herbs and spices. I used Old Bay seasoning. You can also use garlic powder, paprika, salt, and black pepper for seasoning. Preheat: Let cod marinate and absorb spices and herbs for 5 minutes. In the meantime preheat the air fryer to 400°F. Then, grease the air fryer basket with oil or cooking spray. Air fry: Place the cod fillets in the air fryer basket and cook for 8-10 minutes (depending on thickness) or until it turns golden brown and crispy. Flip the fillets halfway through the cooking time to ensure it cooks evenly on both sides. Use a meat thermometer to check if the internal temperature of the fish has reached 145°F. Prepare the dipping sauce: While the cod is cooking, prepare the dipping sauce. You can make tartar sauce by mixing ½ cup mayonnaise, 2 teaspoons finely chopped pickles (or sweet pickle relish), 1 teaspoon of lemon juice, ½ teaspoon of Dijon or yellow mustard and a pinch of salt.Or you can also make a healthy Avocado Cilantro Dipping sauce by mixing avocado, lime juice, garlic, and salt in a blender. The courgette and peas cook down into a silky green purée with ricotta and herbs, which gives the whole dish a creamy richness whilst still tasting light and bright. Then you’ve got the cod, pan-fried until deeply golden with that lovely flaky centre, and the beluga lentils underneath adding a contrast in texture and a slight earthiness when you dig in with a spoon. Nutritionally, it’s a strong one too. You’ve got plenty of protein from the cod, fibre from the lentils and peas, and a nice mix of micronutrients from the vegetables and herbs. But more importantly, it just tastes good, and it’s the kind of meal that feels far fancier than the effort involved. Miso Black Cod (Nobu Style)...this and crispy rice are my go to orders there… Ingredients: •1/4 cup mirin. •1/4 cup sake. •1/3 cup miso paste. •1/3 cup cane sugar. •2 lb black cod (deboned, cut into filets). Directions: 1.- Boil the mirin and sake for 3 min. 2.- Add in sugar and miso. Cook a couple min without boiling. If you’re ever stuck for ideas on how to serve fish for a quick and easy dinner, this recipe is a no-brainer. Hope you love it! Chris xx GARLIC BUTTER COD | Serves 4 INGREDIENTS ➡️COD: 4x 120-150g/4-5oz boneless skinless Cod Fillets 35g / 1/4 cup Plain Flour 1 tsp EACH: Salt, Garlic Powder 1/2 tsp Black Pepper 1 tbsp Olive Oil
1 tbsp / 15g Unsalted Butter ➡️SAUCE: 2 cloves of Garlic, finely diced 120ml / 1/2 cup Vegetable Stock 5 tbsp / 75g Unsalted Butter, diced into chunks 1 tbsp finely diced Fresh Parsley 1 Lemon, divided into 4 to serve (don’t skip this!) METHOD 1️⃣In a large shallow dish combine the flour, salt & pepper. Use kitchen roll to gently pat the cod dry & remove excess moisture. Take a piece of cod, coat it in the seasoned flour then give a shake/pat then place to one side. Repeat with the remaining fillets.
2️⃣Heat 1 tbsp oil and butter in a large non-stick pan over medium-high heat. Place in the cod and fry for 2-3 mins each side, or until light golden on the outside & just about opaque through the centre.* Timings will depend on the thickness of the fillets, but I recommend being cautious as the cod will carry on slightly as it rests and when added back to the pan.
3️⃣Remove the cod & place it on a plate to one side, then lower the heat to medium. Add the garlic & fry for 30 secs or so (careful it doesn’t burn) then pour in the stock. Swiftly stir in the butter until it melts and turns the stock cloudy, then add the parsley. 4️⃣Simmer & stir fairly frequently for a few minutes until the sauce begins to thicken. Season to taste then stir in the resting juices from the cod. Turn the heat to low, add the cod & baste in the sauce to warm it through and finish cooking it through if needed. The excess flour from the cod will slightly thicken the sauce further. Serve with a squeeze of lemon juice and enjoy! *It’s best to time it with your eyes. You’ll want it very slightly underdone because it’ll carry on cooking slightly as it rests and when it’s added back into the pan. The end result should leave the cod opaque through the centre with the flesh nice and flaky. It can overcook quite quickly so just be vigilant.

🐟🥥I originally shared this poached cod recipe over a year ago and it is still my most popular recipe by far! in case you (somehow) missed it, here it is again! it’s so simple and easy, but surprisingly full of flavor. ingredients 2 Cod fillets 1-2 tablespoon Olive Oil 1 can Unsweetened canned coconut milk 14 ounce can 4 cloves Garlic smashed 1 teaspoon Ginger grated 3 tbsps Fresh Dill finely chopped 1 Lemon half sliced, half for squeezing Chili Garlic Oil for garnish Instructions - Pat the cod fillets dry with a paper towel and season cod on both sides with kosher salt and black pepper. If there is skin on the fillets, you may wish to remove it before cooking. - In a medium sized pot or a small saucepan with tall enough sides, heat olive oil over medium heat. Add smashed garlic and grated ginger, sautéing until fragrant and slightly browned. - Add about 4 slices of lemon to the base of the pan on low heat, then place the cod filets on top of the lemons. - Pour in the coconut milk, add the fresh dill along with salt and pepper, and gently stir to combine the flavors. Bring the coconut milk to a gentle simmer. - Let the cod simmer in the coconut milk for 8-10 minutes or until the fish is opaque and easily flakes with a fork. The cooking time on this may vary based on thickness of the fish. Baste the cod loins with the coconut milk occasionally/as needed if it is not submerged. -Adjust the seasoning if needed. Squeeze a bit of fresh lemon juice from the remaining half of the lemon over the poached cod just before serving. - Serve the poached cod over a bed of rice or orzo, spooning some of the coconut milk poaching liquid on top until it is brothy and soup-like. Garnish with additional fresh dill and chili oil.
