CO🐣✨ EASTER COOKIE CUPS ✨🐣
If you’re looking for an easy, fuss-free dessert to wow your friends and family this Easter season, you’ve got to save this one.
These beginner friendly cookie cups turned out cuter than I could have ever imagined and they come together so incredibly easily - no fancy decorating skills required.
To assemble: Fill cookie cups with your choice of filling - I used @nutella_anz here, however, you can use whatever you’d like (Jam, Biscoff, Pistachio etc), top with edible ‘grass’ and mini pastel easter cookies and/or @cadburyaust mini eggs.

I used the below cookie cutters from @lulu.and.stone :
Simple Flower cookie cutter
Hoppy Minis x4 cookie cutter bundle
To make the cookies:
Ingredients-
200g salted butter (room temp)
200g caster sugar
1 egg (room temp)
1 tsp vanilla extract
400g plain flour
Method-
Preheat oven to 160 degrees fan force
Mix butter and sugar until just combined
Add egg and vanilla and mix to combine
Scrape down edges if needed
Add flour and mix on low speed until combined
Lightly roll your dough into a ball and place on a floured work surface
Roll dough in flour to coat then flatten
Roll dough to a 6mm thickness (use dough guides if you have them for thickness consistency)
Cut out your shapes (flowers and mini easter shapes)
Transfer flower shapes to an upside down, greased, muffin tray, resting them on top of each curve
Transfer mini shapes to a lined baking tray
Refrigerate for 15 mins
Bake flowers for 15 mins
Bake mini easter shapes for 10-12 mins
To make the ‘grass’:
Mix a few drops of @colour.mill Oil Based food colouring in Mint into some shredded coconut.
To make the pastel dusting sugar:
Mix a few drops of @colour.mill Oil Based food colouring (in Rose, Lilac and Lemon) into a combination of icing sugar and castor sugar.
