Recipe Below ⬇️ Here’s your reminder to meal prep egg bites for breakfast! I tend to switch up the ingredients based on what I’m in the mood for and this time around, I kept it super simple. Here’s the ingredients: 9 large eggs 1/4 cup heavy cream Salt to taste 2 tbsp melted butter for muffin pan Half roll of cooked sausage, chopped 24 cubed colby jack cheese (2 per cup) 1 cup fresh spinach, chopped 5 slices bacon, chopped Bake for 18-20 min on 375F or until cooked through. #breakfast #eggbites #mealprep

I’m all for treats, especially…well, every day. But, IF the sugar has piled up in your veins, or IF your New Year’s resolutions include starting your morning with protein—here is a just right, super easy, make ahead breakfast (or snacky snack). Yes, these are inspired by Mr. Big Coffee; the recipe is from @lovelydelites. Egg Bites by @lovelydelites Ingredients: - 3 cups egg whites (I used half eggs/half whites) - 1 cup cottage cheese - 1 cup grated mozzarella cheese - Salt + pepper to taste - ¼ cup diced roasted or raw red bell pepper - ¼ cup finely chopped spinach - Boiling hot water - Cooking spray . Directions: 1. Preheat the oven to 350℉ and prepare a silicone muffin mold by generously coating it with non-stick spray. 2. Finely chop the roasted or raw red bell pepper and spinach. (Good spot to include bacon, ham, etc). Set aside. 3. I used a hand mixer (😘 @kitchenaidusa), but a blender also works (😘 @kitchenaidusa) — to mix eggs, cottage cheese and mozzarella cheese for 60 seconds. You want to add in air. Bubbles are your friend! 4. Divide veggies/ goodies between muffin wells, then fill each one with the egg mixture about ¾ of the way full and sprinkle with salt and pepper. I also sprinkled Parmesan cheese on top—but I like shredded cheddar or mozzarella even more. 5. Place your filled muffin tin onto a baking sheet in the middle rack of your 350 degree oven. Fill the baking sheet with boiling water about ½ of the way up the liners, then bake for about 30-35 minutes or until the tops are firm the touch. 6. The dicey very important step—switch your oven to broil and watch 👀 closely for two minutes or until the tops of your egg bites are crunchy brown. 7. Remove from the oven. Let cool for a couple of minutes before removing from the mold and enjoy warm! 8. Yum.

Egg bites are the best grab-and-go breakfast! Packed with protein and veggies, these little bites keep well in the fridge for a couple of days (and longer in the freezer), so they’re great for meal prep. Recipe (makes 12) ⬇️ Ingredients * Extra-virgin olive oil, for the pan * 6 large eggs * ¾ cup whole milk cottage cheese * ¼ teaspoon sea salt * Freshly ground black pepper * 3 cups fresh spinach, 3 ounces * ½ cup diced roasted red bell pepper, about 1 pepper * ½ cup chopped green onion, about 2 green onions Instructions * Preheat the oven to 350°F and grease a nonstick muffin tin with olive oil. * In a blender, place the eggs, cottage cheese, salt, and several grinds of pepper. Blend until smooth. * Place the spinach in a steamer basket and set over a pot filled with 1 inch of water. Bring the water to a simmer, cover, and steam for 1 minute, or until the spinach is wilted. Transfer to a strainer and squeeze out the excess water. Roughly chop. * Place the spinach in a medium bowl and add the peppers and scallions. Toss to combine and measure ¼ cup of the mixed vegetables. Set aside. * Evenly divide the remaining veggies among the muffin cups. Pour a scant ¼ cup of the egg mixture over the vegetables in each well. Divide any remaining egg mixture evenly among the wells. Evenly sprinkle the reserved ¼ cup vegetables on top. * Bake for 18 to 22 minutes, or until the eggs are set. We’re talkin’ a prep time of 30 seconds and a total of $3.89 for 12 high protein egg bites!! You’re gonna want to save this recipe; it’s definitely been a life-saver lately 🙌🏼 ✅ 6 whole eggs ✅ 2 egg whites ✅ 4 ounces prepped lean ground Turkey (optional) ✅ 2 tbsp monetary jack cheese ✅ 1 cup spinach ✅ 1/2 cup roasted peppers ✅ Sprinkle of Lawry’s seasoning Pour into a cupcake pan (light spritz of nonstick spray) Bake at 375° for 25 minutes! Macros for EACH egg bite: 56 cals 6g protein 1g carb 3g fat Hope you love this one as much as I do! 👊🏼💙

These will be on the blog eventually, but sharing the recipe here in the meantime 😍 These tasty bites are perfect for meal prep, reheat beautifully, and are SO GOOD!! . 4 cups broccoli florets 6 eggs 1 cup egg whites 1/2 cup cottage cheese 1/2 cup grated reduced fat cheddar, divided 1/4 cup parmesan 1 tsp salt, divided 1 tsp garlic powder 1/2 tsp pepper Spray a 12-cup muffin tin with avocado oil. Preheat oven to 350. Add the broccoli florets to a pot and add 1/2 cup water. Cover, bring to a boil and steam for 3-5 mins. Drain. Add 1/2 tsp salt to broccoli and toss. Chop the broccoli into smaller pieces and divided evenly between the 12 cups. Add the eggs, egg whites, cottage cheese, 1/4 cup cheddar, Parmesan, salt, garlic powder and pepper to a blender. Blend for 15 second until just combined. Pour evenly into the 12 muffin cups so it reaches almost to the top of each one. Top with the remaining 1/4 cup cheddar. Place the muffin tin on a baking sheet for easy transfer and put in the oven. Bake for 20 mins or until the tops are set. Preheat the oven to 350°F and grease a nonstick muffin tin with avocado oil. 2. Place the eggs, cottage cheese, salt, and several grinds of pepper in bowl and whisk.  3. Place the spinach in a medium bowl and add the peppers and mushrooms . Toss to combine. 4. Evenly divide the remaining veggies among the muffin cups.  5.
