DEEasy Berry Flapjacks 🍓
Ahead of the bank holiday weekend, we wanted to share an easy (and crowd-pleasing!) bake. And with the back-to-school season around the corner, it only made sense to us to share a recipe for a simple flapjack. These ones are fruity, zesty and have that perfectly chewy texture that’s so satisfying!
Even better, they come together with just a handful of simple ingredients you probably already have at home! 🌟
What you’ll need 💕
- 125ml olive oil (+ extra to grease)
- 150g coconut sugar
- 3 tablespoons maple syrup
- 25 ml water
- 1 lemon, zested
- 350g porridge oats
- 115g frozen berries
- 1 pinch of sea salt
How to make them 💕
1. Preheat oven to 180°C fan / 400°F. Grease and line a 20cm / 8″ square baking tin with oil and baking parchment.
2. Put the olive oil, sugar, maple syrup, water and lemon zest into a saucepan and bring to a simmer (don’t worry if it splits slightly). Stir in the porridge oats and a pinch of salt. Pour the mixture into the lined baking tin and press down with the back of a spoon until level.
3. Sprinkle over the frozen berries, then lightly press them into the flapjack mixture. Bake for 30 minutes until golden brown. Leave to cool completely in the tin before lifting out and slicing into 9 squares. Store in an airtight container.
