NAClassic lamingtons ✨ soft fluffy cake dipped in chocolate and rolled in coconut. Easy, nostalgic, and very Queensland.
Cake
4 eggs
120g sugar
140ml milk
120ml vegetable oil
Vanilla
240g flour
16g baking powder
Bake 180°C for 25 min
Chocolate sauce
200g dark chocolate (70%)
120ml milk

TAI have always been nervous to bake Lamingtons, to be honest I didn't think I would even try to attempt baking them, I thought it was a very long process and I can't believe how easy they actually are to bake.
Step 1
In a bowl cream together 250g butter, 1 cup castor sugar and 1 teaspoon vanilla essence
Step 2
Add 4 large eggs one at at time and whisk
Step 3
Add 3 cups sifted flour and 2 teaspoon baking powder
Step 4
Add the butter mixture with 1 cup milk to the eggs little at a time and whisk
Step 5
Pour into greased 20x20 oven tray and bake @ 180dc for 20-30 min
Step 8
Once cake baked allow to cool, cut into squares and freeze for 30 mins
Step 9
Make a syrup: mix together
1 half cups water
3 cups icing sugar
3 tbl cocoa
2 tbl butter
And bring to a slight boil
Step 10
Dip the cake into the syrup and coat in dedicated coconut
