Welcome to episode 9 of my desi food series with Hamdard! Let’s make the BEST Nihari ❤️
❗️Recipe ingredients:
1 cup oil
2 large onions
1 KG Beef/Mutton with bing/shank
2 tbsp ginger garlic paste
1 tsp kashmiri lal mirch powder
1 packet nihari masala (@hamdardfoods)
6 cups water
3/4 cup wheat flour / aata mixed in 1 cup water
Top with:
Coriander
Green chillis
Brown onion
Lemon slices
Ginger
Serve with naan and enjoy!

You guys really give me the best recommendations.
Couple of you recommended this authentic Pakistani restaurant in old Dubai “Naif” 1978 - and since then they are serving different types of Nihari and some other classics like dal and biriyani.
Such an amazing experience to watch the chef sitting on next to the barrel and cooking with passion - the meat was so juicy and soft, this guy really knows what he is doing!
The nihari was amazing full of flavor that I haven’t tried in any Pakistani restaurant, the meat was so soft and Maghz (brain) was so rich and well spiced.
but let me tell you this the biryani was the best biryani ever I have tried so far, the spices were very aromatic. I am sure my dad will approve too.

The objective to this recipe was the following:
TARGET TEXTURE — silky, lip-coating broth
* Bone-in shank, cross-cut into 5–6cm rounds The bone exposure maximises collagen and marrow release — both essential for gelatin body in the broth.
* Separate marrow bones Marrow stirred in at the end emulsifies the broth. This is what gives nihari its lacquered, glossy appearance rather than a greasy surface.
* 5–6 hours at 82–88°C — not a rolling boil Collagen converts to gelatin slowly. High heat toughens the meat and breaks the emulsion into a greasy, cloudy broth.
TARGET FLAVOUR — deep, unified, no sharp edges
* Whole spices, toasted and freshly ground Toasting creates new flavour compounds that don’t exist in raw spices. Pre-ground has already lost most of its volatile aromatics.
* Spices bloomed in ghee, not added to water Aromatic compounds in spices are fat-soluble. Ghee is the solvent — without it you extract a fraction of the flavour potential.
* Onions cooked to copper, not gold The Maillard reaction needs to fully complete. Gold onions mean it barely started — the gravy will taste thin regardless of how many spices you add.
* Overnight rest in the fridge Spice compounds continue migrating and equilibrating for hours. Sharp individual notes round out. Day-two nihari is a noticeably different dish.
TARGET CONSISTENCY — gravy that coats and clings
* Atta flour slurry, not cornflour Atta gives a softer, more integrated thickness
* Slurry simmered 20 minutes after adding Raw starch has a chalky, floury taste that only disappears once fully cooked out
* Season only at the end The liquid reduces significantly across 6 hours, concentrating salt
TARGET CONTRAST — garnishes are not decoration
* Fresh ginger, coriander, green chilli, and lemon ready to serve Nihari is intensely rich — it needs contrast to stay enjoyable

Nihari is one of the most famous dishes from Pakistan and is incredibly delicious this dish is actually made of slowly cooked veal, which is marinated in a special gravy, and it also includes the whole bone marrow of the veal, which is fried in oil. It is served with fresh and hot local bread, which is baked right there in the traditional oven. This dish was a masterpiece among masterpieces. I should also mention that Javed’s Nihari restaurant started 45 years ago from a small food truck and has now become a very famous restaurant in Pakistan.
