Ingredients: • 5 oz baby arugula • 2 pears, sliced • 1 cup feta cheese, crumbled • 1/2 cup pecans, chopped • 1/2 cup dried cranberries Dressing: • 5 tbsp olive oil • Juice of 1 fresh lemon • 1 tbsp honey • Salt & pepper, adjust to taste 🥄 Instructions: 1. It requires just a couple of minutes to make this delicous frozen treat and five ingredients to whip up. It’s frosty, sweet, fluffy, creamy and packed with flavor. Perfect for the hot summer days. Enjoy! Ingredients 3 frozen bananas, into pieces 250 grams frozen strawberries 1 tsp vanilla bean powder Big splash (raw) milk/plantbased 25 ml maple syrup (optional) How to Add all ingredients to foodprocessor, blend for about 2 minutes total until smooth. I stop every 20 seconds or so to stir the inside up and make sure no pieces are stuck. Serves 6–8 INGREDIENTS For the salad: 1 cup Orzo pasta, cooked and drained 3 Persian cucumbers, quartered lengthwise and chopped 1 red bell pepper, diced 1 can Garbanzo beans, drained and rinsed 1/2 cup Bocconcini mozzarella, quartered 1/4 cup Castelvetrano olives, chopped 3 scallions, finely chopped 1 bunch Italian parsley, finely chopped For the dressing: 1 small shallot, minced 1 lemon, juiced 1 tsp Dijon mustard 1 tsp oregano 1 tsp salt 1/4 tsp pepper 1/4 cup olive oil DIRECTIONS: 1. In a large bowl, combine the orzo pasta, cucumber, bell pepper, garbanzo beans, mozzarella, olives, scallions, and parsley. 2. To make the dressing, whisk the shallot, lemon juice, dijon mustard, oregano, salt, and pepper while you stream in the olive oil. Mix until the dressing becomes emulsified. 3. Pour the dressing over the orzo salad and thoroughly mix. Cover and refrigerate for at least 2 hours. Enjoy!

This cozy meal is hearty, nourishing and comforting without feeling heavy, perfect for a slow, satisfying midday break. 🥰 Ingredients: -2-3 medium potatoes, boiled and cubed -1 cup fresh spinach, roughly chopped -1/2 red bell pepper, diced -1/2 red onion, thinly sliced -2 eggs -1 tablespoon yogurt -salt and pepper, to taste -pinch of dried herbs -grated cheese (cheddar, mozzarella or any melting cheese) -olive oil or butter, for greasing Instructions: 1. Preheat oven to 180°C / 350°F and lightly grease a small baking dish. 2. Add the boiled potatoes, spinach, red pepper and red onions. Season lightly with salt and pepper. 3. Whisk eggs with yogurt, a pinch of salt, and dried herbs until smooth. Pour the egg mixture evenly over the vegetables. Top with cheese, covering the surface lightly 4. Bake for about 20 minutes, or until set in the centre and lightly golden on top. Let it rest for 5 minutes, then slice and serve warm.
