@mountain_man_sims officially named these spudnuts and I'm here for it 170g Water (preferably the water used to boil potatoes) 5g Sugar (for activating yeast) 7g Dry Active Yeast 100g Sugar (normally 65g) 212g Potato (weighed after boiling and mashing) 2 Eggs 575g Bread Flour (I'd probably go up to at least 600 if not 625) 6g Salt 84g Butter (room temp) glaze: 180g Powdered Sugar 45g Milk (could probably go up 5 or 10g) 1/2 tsp Vanilla Extract Peel and boil potatoes for about 10-15 min until tender. Rice them or mash them and reserve cooking water to cool. Once down to about 115°F add sugar and yeast to water and let sit until foamy. Add everything else except the butter and start mixing. Knead for about 5 minutes and then add butter 1 Tbsp at a time until fully incorporated. Form into a ball and place into a greased bowl until doubled in size. Punch down and roll out to about 1/2" thick and punch out the doughnuts. Place on lightly floured parchment (I ended up cutting mine up for easy transfer). Cover and rest for 30-45 min and then fry at 350°F - idk how long just judge based on the color, flipping when necessary. Place on wire rack for a couple minutes and then glaze and put back on wire rack until the glaze sets. Have you had “spud nuts?” 🥔🍩 Located NW of Denver in Longmont, Colorado - @landlinedoughnuts is a destination shop you should hit if you’re near the Mile High city. 🌆 (we also stopped at Colorado’s 74,000 sq ft Buc-ee’s which is 20 min away) Everything was expertly curated with phones and old toys - down to the handpainted bathrooms. 🎨👩‍🎨🚽 The doughnuts were flower shaped (close to what you get with mochi donuts) which made for crispy edges to go with the soft potato dough inside. 🥔🍩 Spudnuts are top of list for softness for me - so good. The must try flavor is “Brown Butter Glaze” - it’s unreal. Amazing flavor with a perfect saltiness. 🤎🧈 The owners donut travel as well - you can see it in their flavors. They know what we all like - and that comes out in their menu. Plan a little bit of time for you to grab donuts and eat while you explore all the fun retro items. ☎️🗂️🗞️📞 Tell me when you visit!
