Mini Dino Thin Mints! 🦖✨💚 . . I’ve been on a dino kick after making the circus animal cookies last week. ☺️ . I have been making thin mints for the past few years and I think it’s so fun and relatively simple. For these mini dino thin mints I whipped up half a batch of chocolate cut-out sugar cookie dough. I used some mini dino cookie cutters to create the fun little shapes and baked the cookies for about 4-6 minutes. I am not a big fan of peppermint extract so I have always opted for Andes mints and some chocolate melting wafers to create the minty chocolate coating. I just eyeballed the measurements but I would say that I used a 1 to 3 ratio of Andes mints to chocolate wafers. I melted the chocolate over some simmering water and dipped each dino into the mint chocolate mix. Using a fork and the edge of the bowl, I removed any excess chocolate then allowed the cookies to fully set on a piece of parchment paper. ✨🦖 Cutters: Etsy link in bio! these homemade thin mint cookies are gluten free, dairy free, paleo, and refined sugar free, and taste so much like the real thing. you can always have them on hand! cookies: •1 1/4 cups almond flour •1/4 cup cocoa powder •1/8 tsp salt •3 tbsp maple syrup, room temp •2 tbsp coconut oil, melted •1/2 tsp peppermint extract chocolate coating: •6oz dark or semi sweet chocolate (i use dairy free and refined sugar free chocolate) •2-3 tsp coconut oil •1/4 tsp peppermint extract instructions: 1. add all of the cookie ingredients to a bowl and mix until a dough forms then place the bowl in the fridge to allow the dough to chill for 20-30 minutes. 2. once chilled, roll out the dough between 2 pieces of parchment paper (i made the dough about 1/4 inch thick). cut out the cookies with a small circle cookie cutter or a shot/juice glass. remove the excess dough and repeat step 2 until all of the dough is used up. 3. leaving the cookies on the parchment paper, transfer to a tray and bake for 8-10 minutes at 350F (don’t over bake, they burn easily!). I baked for 10 minutes. once baked, allow the cookies to cool completely. 4. once the cookies have cooled, make the chocolate coating: melt together the coconut oil and chocolate (in the microwave or on the stovetop using the double boiler method) then add in 1/4 tsp peppermint extract and mix well. 5. coat the cookies in the melted chocolate then place back on the lined tray. freeze or refrigerate until the chocolate coating hardens then dig in and enjoy! 6. store in the fridge or freezer (we prefer the cookies frozen!). #thinmints #girlscoutcookie #homemadethinmints #veganthinmints #healthycookies #healthythinmints #dairyfreecookies #glutenfreecookies #grainfreecookies #refinedsugarfree #healthydessert #paleocookies #mintchocolate

That crunchy cookie and rich minty chocolate coating is the perfect combo! ✨ Crunchy Paleo Thin Mints ✨ makes 35 cookies Ingredients For the Crunchy Chocolate Cookies: 1 cup almond flour ¼ cup coconut flour (for crispiness) ¼ cup cacao powder (or unsweetened cocoa powder) ¼ teaspoon baking soda ¼ teaspoon sea salt ⅓ cup coconut sugar (or maple sugar) ¼ cup melted coconut oil (or grass-fed butter) 1 egg (room temperature) 1 teaspoon vanilla extract ½ teaspoon peppermint extract For the Mint Chocolate Coating: 1 cup dark chocolate chips (dairy-free for paleo) 1 teaspoon coconut oil ½ teaspoon peppermint extract Instructions Preheat oven to 300°F and line a baking sheet with parchment paper. In a bowl, whisk together almond flour, coconut flour, cacao powder, baking soda, sea salt, and coconut sugar. In another bowl, mix melted coconut oil, egg, vanilla extract, and peppermint extract until combined. Add the wet ingredients to the dry ingredients and stir until a dough forms. Roll dough between two sheets of parchment paper to about ⅛-inch thickness. Use a small round cookie cutter (or a glass) to cut out thin circles. Place on the baking sheet and chill in the fridge for 10 minutes (this helps them stay crisp). Bake at 300°F for 10 minutes, then turn off the oven and leave the cookies inside for another 10-15 minutes to dry out. Let them cool completely before dipping. Melt dark chocolate chips and coconut oil in a double boiler or microwave in 20-second intervals, stirring until smooth. Stir in peppermint extract for the signature Thin Mint flavor. Dip each cookie into the melted chocolate, coating it fully. Place coated cookies on a parchment-lined tray and refrigerate for 15-20 minutes until set. Keep in an airtight container in the fridge for up to two weeks. Store in the freezer for an extra-crisp Thin Mint experience!
