Congee (rice porridge) is the first Chinese medicine recipe I mastered. It’s just rice with more water, which makes it a porridge. Think of congee as a base and whatever you add on top is your medicine, it can even be sweet or savoury (stewed apples, protein, etc). It’s my fave as a breakfast with stewed apple, swap this from your overnight oats. Your digestive system needs warmth & hydration in the morning, nothing cold! Benefits: - Hydrates & nourishes the colon - Repairs the gut lining - Warms digestion & clears dampness - Relieves constipation & reduces bloating - Supports spleen qi (body’s energy flow, your spleen is important for digestion) - Builds blood & qi (esp. postpartum or fatigued) Save this recipe and make a TCM folder so you can easily find it when you need! 😉

Chicken and Shiitake Congee 丨香菇鸡粥 One thing I’ve noticed about my parents is their love for congee. When they visited me in Berlin a few months ago, they made congee almost every single morning. Watching them inspired me to bring more congee into my home again. There’s no better time for a warm, soothing bowl of congee than in winter, during snowy weather. It’s simple, nourishing, and endlessly customizable. This is a shortcut chicken congee made with rotisserie chicken and dried shiitake. The full recipe (including using raw chicken) and tips for making the perfect congee will be on my Substack soon, don’t forget to subscribe 🫶 Basic congee for one 1/4 cup (55 g) white rice  4 cups (950 ml) water 1 tsp vegetable oil   1/4 tsp salt  When the congee is done to your preferred consistency, add shittake mushrooms, shredded rotisserie chicken and ginger. Did you know there’s a trick to making congee in just 20 minutes? Congee, or rice porridge, is a classic Asian comfort food that’s often eaten for breakfast or when under the weather. It’s a very simple dish that traditionally takes at least an hour to prepare, but this hack allows you to make congee in just about 20 minutes. The secret is freezing uncooked rice overnight, which helps the rice break down much faster during cooking. I’m using jasmine rice, but any white rice will work–each variety will give you a slightly different congee consistency. Wash, rinse, and drain the rice, then place in a zip-top bag and freeze for at least 8 hours. Add chicken broth (or your broth of your choice) to a soup pot, along with garlic, ginger, and the frozen rice. Bring to a boil, then cover and simmer for about 15 minutes, or until the rice has reached your desired consistency. If too much broth has evaporated, add a splash or two of water to loosen the congee. Season with salt, pepper, and fish sauce and serve with your favorite toppings. Ingredients ½ cup uncooked jasmine rice 2½ cups chicken broth Kosher salt, to taste Freshly ground black pepper, to taste Fish sauce, to taste For Serving Soft-boiled eggs Sesame oil Chili oil Sliced scallions @jasmineandtea 🫕

The key to making a gut healing congee: 1. Broth made from natural ingredients (I use dashi pouches with the real ingredients NOT powder or cubes) 2. Veggies — choose veggies that are suitable for your gut, I usually go for a root veggie, a leafy green, and some mushrooms 3. High quality protein — turkey, chicken, fish, salmon, eggs, etc 4. Day old rice — can include millet for diversity 5. Garnishes — cilantro, green onion, bonito, salt, sesame or olive oil, any seasonings you enjoy Recipe: • 1/2 cup day old rice • 2-3 cups of dashi broth • 1/4 cup carrots • 1/2 cup mixed mushrooms • handful of spinach • 1/4 cup zucchini • 1 egg • 6 ping pong sized turkey meatballs • garnishes: tamari, sesame oil, olive oil, white pepper powder, green onion, cilantro Instructions: 1. Add rice to broth and gently boil, add in root veggies first to soften 2. After 5-8 mins, rice should become softer and more mush like, add your veggies and protein 3. If it gets too thick, add more hot water 4. Top off with seasonings and garnishes

Congee (jook) is a staple Serves 6 INGREDIENTS 2 cups rice (washed) 6 cups water 4 cups chicken broth 3 slices of ginger 4 tbsp garlic powder Green onions 2 chicken breasts 2 tbsp soy sauce STEPS 1. To a Insant Pot, add washed rice, water, chicken broth, slices of ginger, garlic powder, green onions, chicken breasts, and soy sauce. 2. Mix until everything is combined. 3. Select the “porridge” option and let it cook for ~20 minutes. Once done, let out the steam and shred the chicken (it should come apart fairly easily). 4. ✨ Congee recipe ✨ Usually made by our parents so not many of us know how 🥲 The rest of the world might be going into warmer months but Australia is just slipping into Winter & honestly I am a sunshine, rainbows & beach vibes girl so I’m not coping lol. But I do love Winter fashion & food sooo here is my congee recipe. I add dried scallops to mine, let me know if you want to know how to incorporate, I’m aware it’s not a common household ingredient though 😌 Everyone has congee with different toppings, different textures etc. you can turn off the stove sooner if you like it a bit runnier but HK congee is cooked to the point where the rice is still visible but it has started breaking down and “becoming one” with the congee. Otherwise, isn’t it just rice & hot water 🌝 . . . ✨ Congee recipe✨ 🧄 4 garlic cloves 🧅 1 onion 🪨 thumb size ginger 🐓 chicken wings (cut or whole) - leave out if you want this vegetarian 🍚 1 cup rice 💦 3 litres water Smush garlic, cut onion roughly into wedges, julienne/slice/smush ginger (just don’t grate) & add to a big pot. Clean chicken wings by boiling for 1 min before adding to the big pot, toss out foamy water. Sauté everything for a minute to release oils, flavours and aromatics (don’t take it too far, we don’t want a brown congee). Wash 1 cup of rice and add to the pot with 3 Litres of water, bring to a boil and skim foam if required. Keep on a soft rolling boil and stir often ensuring the bottom doesn’t burn. Congee 3 Ways ⭐️⭐️⭐️- My dad has told me many stories about how poor he grew up. So poor in fact that they didn’t even have the luxury of soy sauce, they often had to just eat their congee plain. He would steal a little bit of pig lard from my grandma’s jar to add flavor to his congee but would need to heat up the spoon and smooth back over the lard so that she wouldn’t notice. My dad still enjoys Congee daily for breakfast till this day, it’s healthy, tasty, comforting and a reminder to stay humble despite success. <SAVE THIS RECIPE> 👵🏻🥣 // GRANDMA’S CHICKEN PORRIDGE CONGEE when @thedailybroth came to me & grandma to devise a chicken porridge using their premium 100% organic chicken bone broth for their clients, we were so delighted to share our take on this! we hope this recipe will nourish young children & provide comfort to you & your love ones during sick days ❤️ enjoy !! INGREDIENTS: (serves 3-4) 1 tub @thedailybroth clear & classic chicken bone broth 1 cup rice 1.2 litres water 1 chicken drumstick + thigh / breast salt to taste optional garnish: salted duck egg, young ginger, spring onion, coriander, white pepper, light soy sauce, sesame oil, shallot oil, garlic oil, fried Chinese cruller (yao cha kwai / you tiao / cakoi) it will definitely taste much better with all these garnishes but to try to avoid oily ingredients for those who are sick! grandmascookingtips💡 ‼️ Cook rice in boiling water so it doesn’t stick to the pot + stir occasionally METHOD: 1. Pour water in pot. Bring to a boil. When water is boiling, add rice. Bring down to a gentle/medium simmer. Let cook for 5 mins 2. After 5 mins, add chicken. Let cook for further 25 mins 3. Stir porridge every 5 mins to prevent sticking & be mindful of water levels. If porridge is too thick add some water gradually to desired consistency 4. After 30 mins, remove chicken. Turn off heat. Let porridge continue to cook in residual heat 5. Shred chicken, set aside 6. Pour 1 tub of @thedailybroth clear & classic broth into porridge. Turn heat on, mix through. (The broth is added towards the end to preserve its nutritional value). When boiling turn heat off 7. Add half of the shredded chicken mix through 8. Ladle porridge into bowls. Garnish with your favourite garnishes.
