Budget Friendly Reverse Seared Chuck Steak for 3 - 8 I’m back on this mess. Preaching the gospel on slow cooked chuck steak for folks to affordably enjoy tasty beef at home. The reverse sear method doesn’t get it as tender as sous vide but it is “faster” (3+ hours as opposed to 24 hours) and it produces a manageably nicely chewy steak that is full of beefy flavor at a non-holiday price point.

This is one of those dinners that cooks low and slow and fills the whole house with comfort ❤️ Tender, saucy, and perfect for Sundays or busy weekdays when you want something hearty and familiar. Full recipe below 👇 🥘 Full Recipe Ingredients 3–4 lb beef chuck roast 1 cup beef broth 1 cup tomato-based sauce (visible rich red sauce) 1 medium onion, sliced 3 cloves garlic, minced 1 tablespoon Worcestershire-style sauce 1 teaspoon salt ½ teaspoon black pepper 1 teaspoon paprika ½ teaspoon onion powder Instructions Place the beef roast into the slow cooker. Add sliced onion and minced garlic over the top. Pour in the beef broth and tomato-based sauce, making sure the roast is partially covered. Sprinkle with salt, pepper, paprika, and onion powder. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the meat is fork-tender. Use a fork to gently shred the beef inside the cooker, mixing it into the sauce. Serve hot with mashed potatoes, rice, or buttered noodles. Velveting Beef (The Proper Way) 🥩 Ingredients: - Beef (topside or chuck), sliced into thin strips against the grain - Baking soda (1 tablespoon per 1 kg of meat) - Water (3 tablespoons) Instructions: 1. Slice the beef into thin strips against the grain. 2. Add one tablespoon of baking soda for every 1 kg (2.2 lbs) of meat. 3. Add 3 tablespoons of water and mix really well. 4. Leave the beef in the fridge for 30-45 minutes. 5. Rinse the beef well under cold water. 6. Drain well and leave to dry for a few minutes in a colander. 7. Marinate with whatever you fancy. 8. Wok fry as you would normally. Worth noting: This method works best with tough cuts of beef like topside or chuck. The texture of the cooked meat is very different from a cooked steak, so it is best used when wok frying meat with other vegetables and sauces.

Ingredients • 3 lb chuck roast • 1 tsp salt • 1 tsp black pepper • 1 tbsp garlic powder • 1 tbsp onion powder • 1 cup beef broth • 1 tbsp Worcestershire sauce • 2 tbsp butter Instructions Season the chuck roast with salt, pepper, garlic powder and onion powder. Sear the roast in a hot skillet until deeply browned on all sides. Place the roast in the slow cooker. Pour in the beef broth and Worcestershire sauce. Top the roast with butter. Cover and cook on LOW for 8 hours until the beef is fall-apart tender. Shred slightly and spoon the rich juices over the meat before serving. Looking for an easy delicious fall meal, I got you covered with this smoked pot roast recipe below! Roast: 3 Lb Chuck Roast (I used @certifiedpiedmontese Grass fed, Grass finished Beef Chuck Roast from @goodlife_brands Binder: @bearandburtons Coat entire roast with Fireshire Wsauce. Seasoning: Season with @watkins.1868 Garlic & Herb Seasoning Braise: 2 lbs of smaller yellow potatoes (if large slice them in half) 2 cups carrots, cut into 2-inch pieces 1 large onion sliced 1 tablespoon olive oil 1 packet lipton onion soup mix 2 12oz beer 4 stems fresh rosemary 4 stems of fresh fresh thyme 1 tablespoon corn starch STEPS: Fire up your smoker to 250 degrees adding in a chunk of cherry wood. Coat with Wsauce as a binder. Now season the roast coating all sides heavily. Place the chuck roast directly on the grill grates. Close the lid and smoke for 2 hours. While the roast is cooking slice your carrots and onions placing the into a Dutch oven. Next add in your potatoes and olive oil. Remove your roast after 2 hours and place into the center of the Dutch oven. Add the lipton onion soup mix, corn starch, beer and fresh herbs. Place back on the smoker for an additional 2 hour or until the roast is fork tender. Shred your beef and enjoy this smoked beef pot roast. Miso & Ginger Chuck Roast 🤤 If you’re a lover of Asian flavours this is one of most delicious braised beef marinades you will ever try! This simple combination of flavours is so versatile and truly shines on this tender, low and slow braised @harveybeefwa chuck roast. Recipe below; - Add the following ingredients to a large marinating dish: 3 TBSP miso paste, 4 cloves minced fresh garlic, 3 TBSP finely grated ginger, 1 tsp chilli flakes, 3 TBSP rice wine vinegar and 1/2 cup soy sauce. - Mix together until the marinate is fully incorporated. - Slice 2kgs of Harvey Beef Chuck into thick steaks. - Place the steaks in to the marinate and mix well until all sides are fully coated. - Cover and marinate in the fridge for a minimum 3 hours. - Once ready add oil to a deep roasting pan set over high heat. - Add the marinated beef then seal on both sides. - Place the lid on the pan, then place in to a preheated oven set to 160C for 2 hours. - Once the beef has softened remove the lid and add 400ml coconut milk. - Stir through the beef and place back in the oven with the lid off for another 45 mins to 1 hour. - Once the beef is tender and the sauce has thickened remove from the oven and gently pull with forks. - Mix the beef back through the sauce then serve over jasmine rice. - Garnish with finely chopped spring onion and enjoy ☺️ With slightly cooler nights on the way this is a must-try!
