MARRY ME MASH 🥔✨ Recipe below ⬇️ @cud_cooks x @robertwelchuk AD This is the ultimate recipe for luxurious mashed potato. Ultra-smooth, buttery, garlic-thyme infused, finished with white pepper and nutmeg. Make no mistake - this is pure indulgence, and it will make your guests so silent at the table. Marry Me Mash: Peel and cube 1kg Maris Piper potatoes. Add to cold salted water, bring to the boil, then simmer gently until completely tender. Drain and leave to steam dry for 20-30 minutes (this step is key for texture). Meanwhile, gently simmer 200ml whole milk and 200ml double cream with 4 chopped garlic cloves and 3-4 thyme sprigs for 30 minutes to infuse. Strain and keep warm. Pass the dried potatoes through a ricer, then fold through 150g melted butter. For extra smoothness, push through a fine mesh sieve. Add the warm infused cream one ladle at a time until silky and smooth but still holding its shape. Season with fine salt, white pepper and a small grating of nutmeg. Taste and adjust. Bonus recipe - Braised Short Rib (perfect with this mash): Season 3-4 large beef short ribs generously with salt and pepper and sear in a hot casserole pot with 1 tbsp oil until deeply browned. Remove. In the same pot soften 1 diced onion, 2 diced celery sticks and 2 diced carrots. Add 2 tbsp tomato purée, 3 sliced garlic cloves, 3 thyme sprigs and 2 bay leaves. Deglaze with 500ml red wine, reduce slightly, then add enough beef stock (around 750ml-1L) to fully submerge the ribs. Return the ribs, cover and cook at 130°C for 4 hours until spoon tender. Remove the ribs, strain and remove the fat from the sauce (use a separator jug if you have one). Pass through a fine sieve and then reduce it until glossy and thick enough to coat the back of a spoon. Return the ribs to the sauce and baste. Silky mash. Sticky, rich beef. Drain and mash until smooth. - Stir in, garlic powder, onion powder, cayenne powder, smoked paprika, smoked Gouda, parsley, salt, pepper, and cornstarch. - Mix well until creamy but firm. Let cool slightly. - Scoop about 3 tbsp mashed potato mixture into your hand. - Flatten slightly, place a small cube (or pinch) of mozzarella inside, then roll back into a ball to seal. Place in fridge or freezer for 30-45 minutes. - Roll each ball in paste, then coat in breadcrumbs. Find the full recipe below Ingredients: 5 large russet potatoes 1 large onion 3-5 garlic cloves, minced 2lbs ground beef ½ cup grated parmesan cheese ½ cup milk ½ -¾ cup FAGE Sour Cream Salt and pepper or any salt, pepper, garlic seasoning Frying oil (I used peanut oil) Garnish: Carmelized onions and garlic Chopped parsley Bacon bits FAGE Sour Cream Instructions: -Preheat smoker to 350F (or oven to 400F) -Cover potatoes in a little olive oil and salt and place in the smoker or oven for about 1 hour -During that hour, caramelize onions, saute garlic, then remove and cook beef. Set both aside and cover with foil for later -Once potatoes are fork tender, pull them off onto a cutting board, cut in half, and hollow out the center until edges are about ¼ inch thick -Mash the filling with parmesan, milk, FAGE sour cream, and seasoning. Mix well then add the beef. Fry potato boats in 350F oil until crisp and fill with beefy potato mixture -Top with cheese, onions, and back into the smoker/oven until cheese is melty. Braised beef brisket Comfort food to the absolute MAX. Fall apart beef in the most divine glossy sauce. Enjoy! serves 4 3-4 tbsp olive oil 750g / 1.65 lb beef brisket joint 2 celery stick, diced 1/2 white onion, diced 1 large carrot, diced 2 tbsp tomato paste @muttipomodorouk 1/4 tsp cumin 1/2 tsp salt 1/2 tsp black pepper 300ml / 1 1/4 cups red wine 500ml / 2 cups beef bone broth/ stock @frejafoods 4 sprigs fresh thyme 2 tbsp salted butter - 1 kg / 6 cups potatoes (weigh when peeled + raw) 80g / 1/3 cup salted butter 160ml / 2/3 cup double/ heavy cream 1/2 tsp salt - Handful chives, chopped In a big pot on medium-high heat, add olive oil and your beef chunks (about 2 inch sized chunks). Brown on each side and then remove from the pan and leave to the side. Add celery, onion, carrot and mix for a few minutes. Add garlic, tomato paste, cumin, salt and pepper. Return the beef and cover with red wine, beef bone broth/ stock and some fresh thyme. Reduce the heat to a simmer and leave for 4 hours. When you are getting close to the beef being ready get a pig pot of water on to boil and add your peeled and quarter potatoes. Boil for around 15-20 minutes, until a knife goes through the centre easily. Drain and mash. Add butter, double cream and salt. Mix. When the beef is ready, take the beef out and strain the liquid into a pan. Simmer on a medium heat until thickened (this may take 10-15 minutes). Once the sauce is getting thicker, add the butter and mix. Re-add the beef and coat in the sauce. Add some mashed potato to your plate followed by beef, some sauce and then chopped chives. Dig in!! #braisedbeef #beefbrisket #chuck #comfort #mash
