Save this recipe… you’ll definitely want to make it again 🥔 Kitchen tools I use are linked in my bio 🍳 Recipe 🥔🧀 Ingredients • 3 large boiled potatoes • 1/2 cup shredded mozzarella • 2 tbsp parmesan (optional) • 2 tbsp cornstarch Seasoning • 1/2 tsp salt • 1/2 tsp black pepper • 1/2 tsp paprika • 1/2 tsp garlic powder • 1 tbsp chopped parsley Coating • Flour • 2 eggs • Breadcrumbs Instructions Mash the boiled potatoes, then mix with mozzarella, parmesan, cornstarch and the seasoning. Shape into croquettes. Coat in flour, then egg, then breadcrumbs. Fry in oil at 350°F (175°C) for about 3–4 minutes until golden and crispy. The tender, pan-seared steak smothered in a silky garlic cream sauce makes my kids say, “This tastes fancy!” even though it’s so easy to make. Cozy, elegant, and incredibly flavorful. Ingredients: For the Steak 2 lbs steak (sirloin, ribeye, NY strip, or tenderloin) 2 tablespoons olive oil 1 tablespoon butter 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon paprika For the Creamy Garlic Sauce 2 tablespoons butter 6 cloves garlic, minced 1 cup heavy cream 1/2 cup beef broth 1/2 cup grated Parmesan 1 teaspoon Italian seasoning 1/2 teaspoon salt 1/2 teaspoon pepper Optional: fresh parsley or thyme Instructions: Pat steaks dry and season both sides with garlic powder, onion powder, salt, pepper, and paprika. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear steaks for 3–5 minutes per side depending on thickness and preferred doneness. Remove and set aside to rest. In the same skillet, melt 2 tablespoons butter. Add minced garlic and cook 1 minute. Pour in beef broth and scrape the browned bits from the bottom of the pan. Cowboy butter steak bites ✨ Ingredients Steak - 2 pounds ribeye or sirloin steak, cubed - 1 tbsp neutral oil - 2 tsp Worcestershire sauce - 2 tsp garlic powder - Salt and pepper to taste (generous amount) “Caramelized” onions - 1 large yellow onion, sliced - 1 tsp granulated sugar - Heaping pinch of salt Cowboy butter - 12 tbsp unsalted butter - 5 garlic cloves, minced - 1 shallot, minced - 1 lemon, freshly squeezed - 1 tbsp Dijon mustard - 1 heaping tbsp parsley, chopped - 1 heaping tbsp chives, chopped - 1 tsp thyme - 1 tsp cayenne powder (adjust to heat preference - 1/2 tsp red chili flakes - 1/2 tsp smoked paprika - Salt to taste Instructions - Toss cubed steak with oil, Worcestershire, garlic powder, and a generous amount of salt & pepper. Set aside while the pan heats. - Heat a skillet over medium heat with a little oil or butter. - Add onions, sugar, and salt. Cook 15-20 minutes, stirring occasionally, until soft, golden, and jammy. Add steak in a single layer (work in batches if needed). - Sear 2–3 minutes per side until deeply browned. Remove and set aside. Lower heat to medium. - Add butter to the same pan. The recipe is below! 💗 What you need 🥩✨ 1. 2.25lb Boneless Beef Chuck Roast 2. 3 Garlic Cloves 3. 1 Medium Yellow Onion 4. Carrots (I used 3) 5. Minced Parsley 6. Thyme 7. Baby gold potatoes 8. 4 Cups of Beef broth 9. 2 Tablespoons of Tomato Paste 10. 3 Tablespoons of Real Butter 11. 1/2-1cup of red cooking wine 12. Kinders cowboy butter seasoning 13. White pepper 14. Beef bouillon Steps 🥩✨ 1. Prep your veggies first, wash and peel your carrots, wash your potatoes, slice and dice your onion, mince your garlic, and wash your thyme. 2. Season your chuck roast on both sides with kunders cowboy butter seasoning, white pepper, and beef bouillon. Cook on medium heat for 4 minutes on each side until you get a nice crust. Once you get a nice crust remove from heat and set aside for now. 3. In the same pan, add your onions. Sautee for 4 minutes and add your minced garlic. Sautee until fragrant. 4. Add 2 tablespoons of tomato paste and mix well with onions and garlic. 5. After 2 mins add your red wine and let it reduce for 3 minutes on medium heat. 6. Once your red wine reduces, Add 4 cups of beef broth and scrape the bottom to get all the flavor. 7. Season your broth to taste, mine needed a little more salt, so I added beef bouillon. 8. Add your beef roast, carrots, baby gold potatoes, and thyme and three tablespoons of butter. Cover and cook for 3 hours at 350 degrees. 9. There’s something about slow baked chicken that just feels grounding. This is the one I make when we need comfort — but I still want it made with real ingredients and plenty of protein. It’s simple. It’s rich. And it tastes like it took way more effort than it did. ——— Bone Broth Smothered Chicken Ingredients: • 2 lbs bone-in, skin-on chicken thighs (OR cut of your choice, depending on your goals) • 1 tsp salt • 2 tsp paprika • 2 tsp onion powder • 2 tsp garlic powder • 2 tsp dried oregano • 1 tsp black pepper • 2–3 tbsp olive oil • ½ yellow onion, thinly sliced • 6–8 sprigs fresh thyme • 4–5 fresh garlic cloves, whole • 2 cups chicken bone broth • 2 tbsp cornstarch • Cooked white rice or mashed potatoes, for serving Instructions: 1️⃣ Preheat oven to 350°F. Season chicken and drizzle with olive oil. Toss to coat. 2️⃣ Add onions, thyme, and fresh garlic to roasting pan. Add chicken on top. Pour bone broth around the chicken (not directly over top). 3️⃣ Cover tightly and bake 1 hour 30 minutes. 4️⃣ Remove chicken from oven and discard thyme. Pour broth into a bowl. 5️⃣ Increase oven to 450°F. Whisk ¼ cup drippings with cornstarch to form a slurry, then mix into the rest of your broth. While I am mixing up my “gravy” I like to pop the chicken back in the oven. It adds a nice crispiness to the chicken that really brings out the flavor. When your chicken has browned a bit, pour the gravy over chicken. 6️⃣ Return uncovered for ~20 minutes until golden and sauce thickens. Serve over rice or mashed potatoes so none of that sauce goes to waste. Make this for your macros/goals by changing the cut of meat: Thighs = richer flavor. Breasts = leaner option. Save this one. I’m feeling like we only have a few days left of passable cozy food season, so with St. Patrick’s Day knocking, I’m ending cozy food season with a bang: cottage pie. This version leans into a few small touches that make it extra comforting. The onions cook down until lightly sweet, a splash of red wine (or Guinness) deepens the gravy, and a little Dijon and milk round everything out at the end. The mashed potatoes get plenty of butter and sharp Kerrygold Irish cheddar, then are fluffed and messed around a bit so the peaks crisp beautifully in the oven.
