I have worked in the hospitality industry for 15 years now, 5 of them being in Paris. On January 1, 2020, with 2 suitcases and less than 1000€ in my bank (after I had transferred all the money I had worked and saved for 10 years to go for tuition and housing in Paris 😅), I left the states for good & moved to Paris to attend Le Cordon Bleu for pastry. Photo 2 is one of the first photos I took in Paris ☺️ I graduated in December of 2020 with a pastry diploma. Picture 3 is my final for my diploma with a sugar sculpture, chocolate sculpture, and my entremet creation. I have since then worked at various prestigious bakeries, restaurants, and hotels in Paris and even became head pastry chef at a bakery. Pictures 6-8 are some of the platings I have done as a pastry chef here. Even while working 60 plus hour weeks, and in a smaller apartment than we have now (it was 12m2 on an 8th floor walk up😅), I am ferociously obsessed with pastry and would bake in our tiny apartment after hours of baking at work. Picture 9 is the smallest oven to ever exist😂, but it made the pastries in pictures 10-13 and many more☺️ pic 10 is a cherry blossom entremet, pic 11 is a coconut and mango entremet, and pic 12&13 is a birthday cake for my sister in law which I painted her favorite painting on top with icing and piped buttercream flowers. Last year we had a big business opportunity fall through which was incredibly difficult for us for an already hard year (or two, thank you visa troubles!) and I found myself falling out of love with the place I had fought so hard to live in. So in an attempt to fall back in love with Paris and my life I had created here, I decided to create and share videos, not thinking anything would come of it, but these last few months have been such a surprise, and l am so overwhelmed with gratitude for every one of you.
