🥤 This is how a ginger bug makes natural soda in any flavour you like. Through wild fermentation, using just raw ginger, sugar, and water, you can create your own probiotic soda at home. On the skin of ginger live wild yeasts and lactic acid bacteria. Feed them sugar, and the magic begins: ✨ Yeasts turn sugar into carbon dioxide and a little ethanol ✨ Lactic acid bacteria create lactic acid for tang and preservation Seal it in a bottle to trap the carbon dioxide and you’ve got real, naturally carbonated soda. My favourite flavours: 1. just ginger 2. black currants to make cassis (from my garden) 3. red currants (from my garden) 4. cranberry 5. green tea How start a ginger bug? A ginger bug is like a sourdough starter. You need to feed it to keep it alive. Ginger bug starter 🍹✨ Ingredients: 350 ml clean water 1 tbsp unpeeled fresh ginger, chopped (important: must be organic!) 1 tbsp cane sugar Method: 1️⃣ Chop the unpeeled ginger into small pieces (don’t peel, because the skin has wild yeasts!). 2️⃣ Add the water, ginger, and sugar to a clean glass jar. Stir vigorously to dissolve the sugar and introduce oxygen. 3️⃣ Cover loosely with a cloth or lid and keep at room temperature. 4️⃣ Every 24 hours, feed with 1 tbsp chopped ginger and 1 tbsp sugar. Stir well. 5️⃣ Repeat daily until you see bubbles, a slightly yeasty smell, and fizz when stirred — usually after 3–5 days. ✨ Once active, store in the fridge and feed once a week. 🫐 Probiotic naturally carbonated soda – made from scratch! In any flavour you like! This bubbly black currant soda is fermented with a homemade ginger bug, so it’s naturally fizzy, full of gut-friendly microbes, and made with real ingredients. No weird additives, just old-school fermentation magic. ✨ I simmered the berries with sugar to draw out all that deep, tangy flavor. Once cooled, I mixed it with water and my active ginger bug. A few days later… I got natural soda! Which classic soda do you want to re-create at home? 👇 Let me know in the comments. Recipe for probiotic cassis/or any flavour you like (1.5L) Ingredients: - 200 g / 1½ cups black currants (or other berries) - 200 ml / ¾ cup water - 120–150 g / ½ to ¾ cup sugar (adjust to taste and sweetness of berries) - 1.2 liters / 5 cups water (non-chlorinated) - 125 ml / ½ cup active ginger bug (strained) — Method: 1️⃣ Make the syrup: In a saucepan, combine black currants, sugar, and 200 ml water. Bring to a boil while stirring to dissolve the sugar. Reduce heat and simmer for 10–12 minutes until berries are soft and burst. Mash gently to release more juice. Strain through a fine sieve, pressing to extract all the liquid. Let the syrup cool completely. 2️⃣ Prepare the soda base: In a large clean pressure safe bottle, add the strained ginger bug and the cooled syrup mixed with 1.2 liters water. Leave about 2–3 cm headspace. Shake to mix. Tip: Fill a small plastic bottle with some of the juice to check pressure by squeezing the bottle — when it’s firm, it’s fizzy. 3️⃣ Seal tightly and let ferment at room temperature for 1–5 days (depending on how active your starter is on what your room temperature is). Burp glass bottles daily to release pressure and prevent explosions. 4️⃣ Once carbonated to your liking, move the bottles to the fridge to chill and slow fermentation. This is important to prevent the soda from bursting out of your bottle. Refrigerate before opening to slow fermentation.
