DATE + WALNUT COOKIES These 3 ingredient cookies are made with dates and walnuts. They are So easy to make, so delicious and I’ve dipped these in dark chocolate and added a sprinkle od sea salt. They are rich in fibre, protein and magnesium and I cannot stop eating them!!! They will be a staple in my snacking game for 2026!! Each serving which is 2 cookies has 6.5 g of fibre, 7g of protein and 110gmg of magnesium Recipe: 1 cup (100g) walnuts halves 40g ground almonds 6 medjool dates, pitted and chopped 50g 70% dark chocolate Pinch of salt In a blender add the walnuts and pulse, then add ground almonds and the chopped dates. Pulse anti it comes together. Take out and will be like a dough with still some dates pieces. Shape into 8 round and flatten into cookie shapes. Place on some parchment paper and bake in a preheated oven (180C) for 10-12 minutes until light browned on the edges. Melt some chocolate and then cover half the cookie with the chocolate as shown. THREE INGREDIENT, GOOD MOOD, CHOCOLATE MOUSSE CAKE. Three simple ingredients make the most gorgeous and delicious mousse cake! These ingredients are great because we know that (if you look at my previous posts i just shared): 1- saffron supports good mood 2- Dark chocolate is full of fibre, polyphenols and positively supports the gut brain axis and good mood 3- stewing fruit like pears helps release more of a special kind of fibre called pectin which anti-inflammatory and supports gut health and how you feel. RECIPE: 400g chopped pears 200g 85% dark chocolate Big punch saffron Simply cut 400g of pears, that is about 2 pears, into small cubes , add a good pinch of saffron and add a little of water, 2 tbs. The pears naturally will release a lot of liquid so you don’t want to add too much. Using a wide base pan for this can be helpful. Cover and let simmer for 8 minutes covered and two minutes uncovered to let any residual liquid evaporate a little. When soft and mushy add your chopped up dark chocolate (2 bars) and mix until melted and combined Blend well. should be velvety and smooth. Empty into a lined cake pan. I used a small one which was 5x5 inches Refrigerate for a few hours/ overnight. 💥HEALTHY CHICKEN AND RICE POWERBOWL Im just coming back from vacation and back into my routine, and this is the type of healthy lunch or dinner that makes it easy to get back into the rhythm. It honestly tastes better than take out - but packed with protein, lowcarb, and so good. I’ve lost 150lbs eating meals like this everyday. I used my @kaizenfoodco lowcarb rice here, but use regular rice, quinoa, cauliflower rice, or any rice you like. Here’s how I made it (makes 4 servings) 1.CHICKEN:Add 1.5lb skin-on bone-in thighs to a bowl (I remove skin later). Drizzle with 1 tsp olive oil, season with salt & pepper, 1.5 tbsp garlic powder, 1 tbsp smoked paprika, 1 tbsp thyme or oregano, 1/4 tsp cayenne pepper. To make the skin crispy, I add 1 tbsp baking powder. Mix well then pop into the oven at 400F for 40 mins. 2.SAUCE:I use a mix of greek yogurt & mayo to make it light. Process 1/2 cup Greek yogurt, 2 tbsp mayo, 2 scallions, 2 large handful fresh cilantro, 1/2 jalapeño (seeds removed if preferred), juice of 1.5 limes, 1/2 tsp chipotle powder & couple pinches salt. Taste & adjust. 3.SALAD: I made a light salad with 4 thinly sliced Persian cucumbers, 3 tbsp finely diced red onion, 2 tbsp finely chopped cilantro, drizzle with 1 tsp olive oil, the juice of half a small lemon, & a pinch of salt. Mix, taste, and adjust! 4.BASE:I used a box of my Kaizen lowcarb rice here, but use whatever rice you like! Just cook according to directions. 5.ASSEMBLE: I put a serving of Kaizen protein rice at the base, a chicken, two large spoonfuls of the salad, 2 avocado slices, & drizzled some sauce. 🍫🥜PROTEIN CHOCOLATE PB BROWNIE Crumbl just dropped their highest protein menu item… a peanut butter brownie. Sure its got 20g protein, but it comes in at 1200 calories for a single brownie. This healthier brownie version? The same rich, chocolate-PB flavor for under 200 calories and 20g of protein per square. You could eat all of these for 1200 calories. Each piece: 170 calories and 20g protein These are dense yet light, and really scratch the itch INGREDIENTS: Brownie Base
16 oz 2% cottage cheese (blended smooth)
4 eggs
5 tbsp cacao powder (4 for a lighter flavor)
6-8 tbsp powdered monkfruit (or your favorite sweetener)
Nice splash of vanilla extract
2 servings Lily’s or low sugar chocolate chip Protein Frosting 1/2 cup thick 0% Greek yogurt
2 tbsp whipped cream cheese
5-6tbsp powdered PB2
1-2 tsp powdered sweetener (optional) Dust with dark chocolate or add peanut butter M&Ms (optional) 1️⃣ Blend the cottage cheese, eggs, cacao, sweetener, and vanilla until smooth. I used a small food processor. 2️⃣ Grab a baking tray line with parchment paper. Pour in the batter, and toss in the chocolate chips. These add a nice texture
 3️⃣ Bake at 350°F for 45 minutes until set. Remove, and let this cool COMPLETELY then pop into the fridge for 5-6 hours or ideally overnight. This part is IMPORTANT. Do not under any circumstance skip this part. 4️⃣Make the pb frosting by whisk everything together until thick and creamy. Taste and adjust with more PB, powdered monk fruit or vanilla.

Would you try this stuffed sweet potato?? Forget the sweet potato… the creamy sriracha sauce is SO good you’ll want to put it on everything. I’ve lost over 150lbs and this is one of my favorite healthy lunch meal prep option. It’s such an easy tasty option and great way to keep full and satiated with slow digesting carbs, protein, health fats, and fiber. If you are watching your carb intake, sub in spaghetti squash, eggplant, or even zucchini instead! Here is how I made it (makes 6): 1.Slow roast 6 small sweet potatoes at 350°F for 75 mins. Time depends on thickness. You can always roast on higher heat (400F for 50 mins) but I prefer slow roasting. 2.Cook 1 lb lean ground beef (I used 93/7 to be more calorically friendly) in 1 tsp oil. Season beef with salt, pepper, 1 tbsp chipotle powder, 1tbsp garlic powder, 1 tbsp thyme, and 1 tbsp sweet paprika. Mince it down finely with a spatul. I like to get these browned up really nicely, almost crispy in a sense. 3.When the sweet potato are done, cool for a minute or two, then fill each with 4oz of cooked beef, avocado, diced red onion, chopped cilantro, and sauce. You can use hot sauce, or my creamy sriracha sauce in step 4 below. 4.For the sauce (this normally makes 4 servings, but I stretched it to all 6 sweet potato)… mix 2 tbsp mayo with 1/4 cup sriracha, 2 tbsp rice vinegar, 1/2 tsp soy sauce, 2 tsp powdered monk fruit sweetener, the juice of 1 solid lime, 1 grated garlic clove, and 1 thinly sliced scallion or a handful of chopped cilantro. Season with salt and pepper, mix it up, taste and adjust. 5.Top with any veggies you like, chili flakes, sesame seeds, or herbs. This is a great healthy lunch recipe, and perfect for meal prep. If you want to make it higher protein, add ccottage cheese or greek yogurt. It makes a great healthy lunch. 🍫SNICKERS PROTEIN DESSERT Per serving (3): 220 calories, 25 protein Full recipe: 660 calories, 75g protein This is such an easy high protein dessert that feels like a healthy cheat meal. It’s super rich and it satisfies like no other. The perfect way to keep on track in the new year if you’ve got weightless goals or just trying to eat healthier or get some more protein in. ✅ Comment “TREATS” below and I’ll send you my FREE healthy desserts mini ebook. INGREDIENTS -600g (about 2.5 cups) greek yogurt. Use Fage 0% since it’s thick. -2 tbsp whipped cream cheese 5-6 tbsp unsweetened cacao powder (I use 6) -1/2 to 3/4 cup powdered monkfruit or preferred powdered sweetener - make sure its POWDERED - Melted sugar free or regular chocolate chips of choice (I used 2 tbsp to keep this lighter, but use as much as you want) - Sugar free caramel sauce or caramel sauce of choice -Crushed peanuts (I used 2 tbsp, but use however much you like) Here is how I made it: 1.Add the greek yogurt, whipped cream cheese, cacao powder, & powdered sweetener to a small food processor. Note: the sweetener must be powdered or the texture won’t be good. Process well (30-45 seconds until completely smooth and it has like a mouse-like texture. Taste and adjust if needed. 2.Refrigerate for an hour. You can eat this right away, but chilling lets it settle, thicken up a bit, & taste better. 3.Melt your chocolate chips (you may want to add 1 tsp coconut oil) in the microwave for 15 seconds, stir, then in 15 seconds increments until smooth. I used a sugar free one here, but use what you like. 4.Spoon your yogurt into bowls, drizzle some sugar free caramel (or caramel of your choice) spread the melted chocolate on top, and sprinkle with crushed peanuts, top with a little sea salt, chill briefly if you want a crackable chocolate layer.
