So, I thought I’d share some easy & yummy meals to help hit it 🤗 Hack: this doubles as #mealprep with the other half of squash & and your leftover ground beef ✨ Roasted acorn squash: I like it crispy, so I do 1 hr @ 425 with just salt and pepper. Slow roasting is my favorite! Set it and forget it. Ground beef: add onion powder and garlic powder to taste. 1 cup for this serving. Kale salad: I’m a simple girly who just adds part of my 1 cup of ground beef on top, half an 🥑 and @traderjoes green goddess seasoning. Add olive oil or your favorite dressing to spice it up. Hot sauce: @yellowbirdsauce is organic and paleo-friendly. If you like a kick, it’s great on the salad, too! #food #paleo #30daychallenge

Si tu cuerpo está moviendo más grasa para usarla como energía… necesita más transportadores. Por eso en muchas personas que hacen low carb o keto se observa una subida del colesterol. Esto se ve especialmente en personas delgadas con bajo porcentaje de grasa corporal, que tienen menos reservas energéticas y dependen más del transporte de grasa circulante para obtener energía. De hecho, el ser humano está muy bien adaptado a utilizar grasa como combustible. Nuestro “tanque” energético en forma de grasa es enorme comparado con el pequeño depósito de glucógeno. Durante gran parte de nuestra evolución ❄️, en épocas frías o de escasez, la grasa animal fue un combustible clave para sobrevivir. Hoy ocurre justo lo contrario: muchas personas viven en un estado de dependencia constante del azúcar, con picos de glucosa frecuentes, mayor inflamación y resistencia a la insulina. Azúcar que no necesita transportadores, no por eso inocua cuando está elevada de forma crónica en nuestro organismo. Por eso, cuando el metabolismo vuelve a funcionar como está diseñado para hacerlo —utilizando grasa como energía— el colesterol puede subir. No es una señal de peligro.
