When lunch looks this good👇🏼🤭 Crunchy chickpeas, roasted sweet potato, quinoa, red onion, arugula, avocado & pomegranate on a bed of creamy tahini.. so colourful and delicious! Save this video and follow @tessbegg for more recipes 🌱 Serves 2 Chickpeas: 2 cups of canned chickpeas, drained and rinsed Drizzle of olive oil 1 tsp onion powder 1 tsp garlic powder 1 tsp smoked paprika Pinch of salt and pepper Sweet potato: 1 large sweet potato, peeled and diced Drizzle of olive oil Pinch of salt and pepper 1 tsp onion powder 2 tsp smoked paprika Arugula: 2 cups arugula (rocket) 1/2 lemon, juiced Other: 2 cups cooked quinoa 1/4 red onion, sliced 1/3 cup pomegranate Tahini dip (I used a ready-made dip) can sub for hummus 1 avocado, sliced Sesame seeds Pre-heat oven to 200°C. Line two trays with parchment paper. Add the sweet potato one tray and add the olive oil, salt, pepper, onion powder and paprika, then toss to coat. Add the chickpeas to the other tray and add the olive oil, salt, pepper, paprika and garlic/onion powder, and toss to coat. Place both trays in the oven (sweet potatoes on top rack) and bake for 35 minutes. In the meantime, add the arugula to a bowl along with the lemon juice and toss. When the potatoes and chickpeas are ready, add the tahini dip in the bottom of the bowls, then top with quinoa, arugula, sweet potato, chickpeas, red onion, avocado, pomegranate and sesame seeds. Es una receta fácil, muy sabrosa y perfecta para preparar un aperitivo diferente cuando tienes invitados o simplemente para disfrutar de un picoteo saludable. La combinación de zanahorias asadas, tomates secos y anacardos crea una textura cremosa y un sabor intenso que recuerda a la sobrasada tradicional, pero en versión vegetal. Ideal para untar en pan tostado, acompañar con crackers o añadir a tablas de aperitivo. Una receta vegana sencilla, llena de sabor y perfecta para sorprender. Ingredientes para 6 personas 300 g de zanahorias asadas 6 tomates secos 100 g de anacardos remojados Medio diente de ajo Pimentón, comino y sal al gusto Elaboración Asa las zanahorias en el horno o en la freidora de aire con un poco de aceite de oliva virgen extra, sal y pimienta hasta que estén tiernas y ligeramente doradas. En freidora de aire estarán listas en unos 15 minutos a 180 grados y en horno aproximadamente 30 minutos a 180 grados Añade las zanahorias asadas en un vaso triturador junto con los tomates secos, los anacardos remojados, el ajo y las especias y tritura hasta conseguir una textura cremosa Si ves que queda demasiado espesa puedes añadir un poco de agua poco a poco hasta conseguir la consistencia deseada Sirve la sobrasada vegana en un tarro, acompáñala con buen pan y disfruta Espero que os guste tanto como a mí, gracias por todos vuestros comentarios y que tengáis un día precioso #sobrasadavegana #sobrasadavegetal #untablevegano #veganrecipes #plantbased

tell me this doesn’t look like meat 🍖🔍 most people don’t realise this, but calories lost by feeding crops to animals could feed an extra 3.5 billion people (UN stats), meanwhile 673 million people go to bed hungry every night! + beef is genuinely one of the most destructive foods on the planet. it produces up to 50 times more carbon emissions than beans. and just one pound of beef uses 2,400 gallons of water. one pound! on top of all that, the WHO links regular red meat consumption to heart disease, type 2 diabetes and cancer. 🤔 that’s what makes meat industry feel so unnecessary to me. it’s not just an animal welfare issue... it’s a climate issue, a water issue, a resource issue. when you can sit down to a meal that tastes just as good, feels just as comforting, and no animal and no person on the other side of the world paid a price for it… imo that’s just a better way to eat 🤷🏻‍♀️ meat by @juicymarbles #veganuk #plantbased #ukvegans #veganfood #meatfree

Calorie density: The most IMPORTANT and magical fundamental I have learned about weight loss AND satiation Calorie density just means the calories in a food relative to its weight 🌱oil has 4,000 calorie per pound 🌱broccoli has 150 calories per pound When I look at these 2 videos my initial thought is "wow I can eat so much more food for the same amount of calories when I swap out the high calorie element aka oil. This is 2 tbsp of oil (1/8 cup)=240 calories This isn't about good vs bad foods. It's about how can I get more food for less calories. When I physically fill up my stomach, my stretch receptors are hit, signally to my brain I am full and can stop eating. But When I eat higher calorie foods for way less volume my stomach stretch receptors aren't hit, so I can easily keep eating bc I'm not physically full- in turn taking in way more calories. Making it hard to be in a calorie deficit when I'm not physically satisfied and still hungry! Eat foods high in water and fiber content for low calories but high volume!
