Marinated Sun-Dried Tomato Bean Salad, comes together all in one bowl and if you prep it in advance you now have a high fiber, protein and iron dish that you can add or transform into a full meal whenever you need it. Currently what I’m enjoying for lunches this week and eager to make another soon. A big deal for someone like me that doesn’t always like eating the same thing on repeat. 1 shallot, thinly sliced 1/2 cup fresh parsley 2 tbsp vegan mayonnaise 2 tbsp extra virgin olive oil 1 tbsp Dijon mustard 1 tbsp white wine vinegar 2 tsp of the brine from the jar of capers 1 tsp agave syrup 1 tsp dried oregano 1/2 tsp red pepper flakes Zest and juice of 1 lemon 1, 15 oz can chickpeas, drained and rinsed 1, 15 oz can cannellini beans, drained and rinsed 1/3 cup sun-dried tomatoes jarred in oil, julienned 2 scallions, thinly sliced 1 tbsp capers, minced 1 avocado, cubed Kosher salt, to taste Fresh cracked black pepper, to taste For serving: Toasted sourdough or whole wheat bread rubbed with fresh garlic Fill a small bowl with ice cold water. Add the shallots to the bowl to soak while you prep the remainder of your ingredients. After 10 minutes, drain, rinse, pat dry and set aside. Mince half the parsley and add it to a large mixing bowl along with the mayonnaise, oil, mustard, vinegar, caper brine, agave, oregano, red pepper, zest and juice of 1 lemon and a pinch of salt. Whisk to combine, taste and adjust salt to your preference. Add the chickpeas, cannellini beans, sun-dried tomatoes, scallions, capers, shallots, avocado, a generous pinch of salt and fresh cracked black pepper to the bowl of dressing. Stir well to combine, making sure everything is evenly dressed. Cover and chill your bean salad for at least 30 minutes before serving. To enjoy, toast up your favorite bread in a pan with a little oil then cut a clove of garlic in half and rub the cut end over the toast. Spoon a portion of the salad then use the bread to scoop it up and enjoy. #plantbasedrecipes #beansalad

I feel only recently the importance of fiber has been brought to the surface. So if you don’t eat enough fiber it’s not entirely your fault. make sure you’re introducing fiber into your diet slowly(small amounts). if you don’t eat it regularly, too much of it can upset your tummy. I don’t want that for you🫶🏻 if you’re stomachs sensitive, try cooked or steamed veggies over raw veggies. cooked vegetables are a bit more gentle on the stomach. ingredients: 1 can black beans 1 can great northern beans 1 red bell pepper 1 orange bell pepper 1/2 red onion 1/2 cup corn 1 cup cherry tomatoes 1/8 cup cilantro(packed) 1/4 cup feta cheese dressing: 2-3 tbsp fresh lime juice tsp honey 2 tbsp extra virgin olive oil 1-2 tsp garlic powder 1-2 tsp onion powder 1-2 tsp paprika 1-2 tsp chili lime seasoning 1-2 tsp lime pepper 1-2 tsp ground cumin salt to taste this lasts up to 5 days in the fridge and is around 4-6 servings. So perfect for meal prep!:)

Marinated Za'atar Bean Salad recipe Ingredients 1 can (15 oz) Chickpeas, drained and rinsed 1 can (15 oz) Butter Beans (or Cannellini beans), drained and rinsed 1 cup Green Olives (Castelvetrano or similar), roughly chopped ½ small Red Onion, very thinly sliced into half-moons 1 cup Cherry Tomatoes, halved 1 small Cucumber, diced ½ cup Fresh Parsley, finely chopped ¼ cup Fresh Mint, finely chopped ¼ cup Extra-Virgin Olive Oil 3 tbsp Fresh Lemon Juice 1 tbsp Lemon Zest 1½ tbsp Za'atar Spice Blend 1 small Garlic Clove, finely grated or minced ½ tsp Ground Cumin ½ tsp Kosher Salt ¼ tsp Black Pepper Instructions Whisk the Marinade: In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, za'atar, cumin, salt, and pepper. Whisk until well-emulsified. Combine: Add the rinsed chickpeas, butter beans, sliced red onion, cucumber, tomatoes, and olives to the bowl. Toss with Herbs: Add the fresh parsley and mint. Toss the salad thoroughly until all ingredients are glossy and evenly coated with the dressing. Marinate: Cover and refrigerate for at least 30 minutes (up to overnight) to allow the beans to absorb the dressing. Serve: Give it one final toss. Taste and add more lemon or salt if needed. Top with crumbled feta or an extra sprinkle of za'atar if desired.

i have to be so honest divas the farts go kinda crazy with this one but that’s ok 💅🏻😌💨 maybe don’t eat this on date night unless you’re trying to take your relationship to the next level. recipe below 👇🏻 ROASTED BROCCOLI AND CHICKPEA SALAD with tahini chili crisp dressing Serves 4 INGREDIENTS 1 lb broccoli, chopped 2 (15-oz) cans chickpeas, drained and rinsed 2 Tbsp olive oil Kosher salt and black pepper 1/2 cup tahini 2 cloves garlic, minced 2 Tbsp lime juice, from about 1 large lime 1 Tbsp rice vinegar 1 Tbsp soy sauce 2-3 tsp chili crisp (adjust to taste) 1 tsp honey 1-2 Tbsp water, as needed to thin 3 Tbsp toasted sesame seeds 4 green onions, sliced Small handful cilantro, chopped INSTRUCTIONS Preheat oven to 400F. On a parchment-lined baking sheet, toss together broccoli, chickpeas, olive oil, and generous pinches of salt and pepper. Roast for 25-30 minutes, or until broccoli is tender. In a small mixing bowl, stir together tahini, garlic, lime juice, rice vinegar, soy sauce, chili crisp, and honey. If needed, add 1-2 Tbsp of water to thin the dressing to a pourable consistency. In a large bowl, combine roasted broccoli and chickpeas, sesame seeds, green onions, cilantro, and dressing. Here's a light and refreshing bean salad to try! If you want to make it a meal, add in a grain of your choice. Otherwise this is great as a side or snack. Enjoy 🍃 Base 1 can canellini beans, drained & rinsed 1 can butter beans, drained & rinsed 1 small red onion, diced 1/2 cup sundried tomatoes, chopped 1 cup (175g) cherry tomatoes, halved 1 large capsicum, diced (I just used 1 small yellow and 1 small red capsicum) 1/2 cup marinated artichokes, chopped 1 large cucumber, diced 1 cup rocket/arugula 1/2 cup fresh parsley, chopped Dressing 1/4 cup oil from sundried tomato jar OR olive oil 1/4 cup red wine vinegar or can substitute for lemon juice 1 tbsp maple syrup 1 tsp Dijon mustard 1 tsp dried oregano 1 tap dried basil Salt & pepper Method: 1. Whisk oil dressing ingredients until welcome combined. 2. Once all of your salad ingredients are prepped, add into a large bowl. 3. Pour the dressing over and mix well. 4.
