Cheesy pull-apart garlic bread 🧄🧀 ⁣ ⁣ Recipe ⬇️⁣ ⁣ Ingredients:⁣ Tangzhong:⁣⁣⁣⁣⁣ 80 g whole milk⁣⁣⁣⁣⁣ 20 g bread flour⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Main dough:⁣⁣⁣⁣⁣ 300 g bread flour⁣⁣⁣⁣⁣ 15 g sugar⁣⁣⁣⁣⁣ 6 g salt⁣⁣⁣⁣⁣ 90-110 g whole milk (start low, add more if needed)⁣⁣⁣⁣⁣ 40 g cream cheese, full fat⁣⁣⁣⁣⁣ All of the tangzhong⁣ 1 large egg⁣⁣⁣⁣⁣ 12 g fresh yeast (or 6 g instant dry yeast)⁣⁣⁣⁣⁣⁣⁣⁣⁣ 20 g unsalted butter, room temperature⁣⁣⁣⁣⁣ ⁣ Garlic butter:⁣ 1 large head of garlic⁣ 1/2 tbsp oil⁣ Pinch of flaky salt ⁣ Pinch of black pepper⁣ ⁣ 80 g unsalted butter, room temperature 1,5 tbsp chopped fresh herbs (e.g. rosemary, parsley)⁣ Pinch of flaky salt⁣ ⁣ 100 g grated mozzarella⁣ ⁣⁣⁣⁣⁣ ⁣Instructions:⁣⁣⁣⁣ • Start by making the tangzhong: add milk and flour to a small pot. Heat up over medium heat while constantly stirring. Once the mixture has thickened, transfer to a bowl and cool to room temp before continuing with the main dough. ⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ • To make the main dough: add all the ingredients, except butter, into the bowl of your stand mixer. Knead on low speed for 10 minutes until the dough comes together. Add the butter. ⁣⁣⁣⁣⁣ • Knead for 10-20 more minutes at low-med until the dough has a smooth surface and pulls away from the sides of the bowl.⁣⁣⁣⁣⁣ • Place the dough in a lightly oiled bowl, and proof at around 78F/26C for 90 minutes or until doubled in size. ⁣⁣⁣⁣⁣ ⁣ Meanwhile, make the garlic butter:⁣ • Preheat oven to 355F/180C. ⁣ • Chop off the top of a garlic head (leaving the cloves exposed) and drizzle with oil, flaky salt, and pepper. ⁣ • Wrap the head of garlic in aluminum foil.⁣ • Bake for 45-60 minutes. Cool to room temp. ⁣ •In a bowl, add softened butter, chopped herbs, roasted garlic, and salt. Mix with a fork until smooth. ⁣ ⁣⁣⁣⁣⁣ • Once doubled, roll out dough into a 14x14-inch square. ⁣ • Spread garlic butter on top and add grated mozzarella. ⁣ • Use a pizza cutter to cut the dough into 12 pieces. ⁣ • Arrange the dough pieces in a 9x5-inch bread tin as demonstrated in this video.⁣ • Cover, and proof for 30-45 minutes at around 78F/26C, until the dough is nice and puffy. ⁣ • Bake at 355F/180C for 35-40 minutes. ⁣ • Serve warm 💕⁣

These Soft Milk Buns made with tangzhong are great for breakfast, snacks or may be used as burger buns! Below is the recipe. I used a 9 x 11” rectangular pan, lined with parchment paper. Tangzhong: 175g milk
42g bread flour 

In a sauce pan, mix all the ingredients together and slowly cook on low heat until a soft paste forms. Cover with cling and allow to cool completely before using. You can keep this overnight too if you wish but thaw to room temperature first before using. Main dough: 240g Bread Flour (13% protein) 150g AP flour
20g fine whole meal flour 50g castor sugar 3/4 tsp salt 
4g instant yeast 
98-112g full cream milk + 1 egg (100g + egg = 155g)
40g softened butter
1 tsp vinegar Instructions: 1.In the stand mixer bowl, place all dry ingredients and mix with a whisk until combined.
Add in the milk, egg and all the tangzhong and stir to mix before adding to the dry mixture.
Knead until a smooth dough forms then add in the softened butter and continue to knead to window pane. Add in the vinegar and knead until it is absorbed by the dough.
2.Allow to proof, covered, until doubled in size. Transfer to lightly floured table top and knead gently to de-gas. Divide into 12 equal pieces and roll into balls. Rest for 20 minutes.
3.Shape each portion as desired and place into prepared pan. Proof until doubled again, then egg wash the top.
4.Bake in preheated oven at 170C for 25 minutes or until golden. Tent if the top gets too dark.

Country bread with toasted sesame seeds 🥖☁️⁣⁣⁣⁣⁣⁣ Made with 1 g yeast and fermented for 13+ hrs for an artisan-style loaf with a crispy crust and open crumb 😮‍💨 ⁣⁣⁣⁣⁣⁣ For one small loaf:⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Equipment:⁣⁣⁣⁣⁣ Large baking bowl⁣⁣⁣⁣⁣ Kitchen scale⁣⁣⁣⁣⁣ Thermometer⁣⁣⁣⁣⁣ 8-inch oval banneton⁣⁣⁣⁣⁣ Dutch oven⁣⁣⁣⁣⁣ Lame or razor blade⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Ingredients:⁣⁣⁣⁣⁣ 300 g bread flour (I'm using @mulinocaputo Cuoco flour)⁣⁣⁣⁣⁣ 1 g instant dry yeast⁣⁣⁣⁣⁣ 240 g water at 27°C/80°F (use a little less water if you're not used to working with wet doughs)⁣⁣⁣⁣⁣ 6 g salt⁣⁣⁣⁣⁣ 20 g toasted sesame seeds⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Instructions:⁣⁣⁣⁣⁣ 1. Make the dough⁣⁣⁣⁣⁣ Add flour and instant yeast to a large baking bowl. Give it a quick stir. Next, add water and mix with your hands or a silicone spatula until combined. This step should not take longer than a minute or so. ⁣⁣⁣⁣⁣ Cover the bowl and let it rest for 30 minutes.⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ After 30 minutes, sprinkle salt over the dough and mix with your hands for 2-3 minutes (I'm using the Rubaud mixing method if you want to YouTube that) or in a stand mixer on low speed. Mix a little less if you're using a stand mixer — you simply want to incorporate the salt into the dough. ⁣⁣⁣⁣⁣ ⁣⁣⁣⁣ Add sesame seeds and continue mixing for another minute.⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Transfer the dough to a clean dish/bowl. Cover the bowl and transfer to a warm-ish spot at around 24°C/75°F for 3-4 hours. ⁣⁣⁣⁣⁣ Coil fold the dough every hour. It should rise about 60% during this time.⁣ ⁣⁣⁣⁣⁣ 2. Shape⁣⁣⁣⁣⁣ Dump the dough onto a floured work surface and shape: ⁣⁣⁣⁣⁣ Fold in the right and left sides, and roll down into a log. Pinch and tuck the short sides. ⁣⁣ Transfer to a banneton, seam side up. ⁣⁣⁣⁣⁣ Cover the banneton and place the dough in your fridge for 10-15 hours. ⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ 3. Bake⁣⁣⁣⁣⁣ Place a Bread Pan or large Dutch oven in the oven. Preheat for 45-60 minutes at 500°F/260°C.⁣⁣⁣⁣⁣ Remove the preheated Bread Pan from the oven. Tip the bread into the pan, seam side down.⁣⁣⁣⁣⁣ Score the surface of the bread. Put the lid on and bake for 20 minutes.⁣⁣⁣⁣⁣ After 20 minutes, remove the lid, and turn down the heat to 430°F/220°C. Bake for another 10-15 minutes until golden 💕

Happy baking 💕⁣⁣⁣⁣ ⁣⁣⁣⁣ Start by preparing the tangzhong:⁣⁣⁣⁣ 130 g whole milk⁣⁣⁣⁣ 30 g bread flour⁣⁣⁣⁣ ⁣⁣⁣⁣ Add ingredients to a small pot and heat up over medium heat while stirring. Once thickened, remove from heat and transfer to a bowl. Cover with plastic wrap. Cool to room temp before continuing.⁣⁣⁣⁣ ⁣⁣⁣⁣ Main dough:⁣⁣⁣⁣ 430 g bread flour⁣⁣⁣⁣ 15 g sugar⁣⁣⁣⁣ 9 g salt⁣⁣⁣⁣ 1 large egg⁣⁣⁣⁣ 150 g whole milk⁣⁣⁣⁣ All the tangzhong ⁣⁣⁣⁣ 65 g cream cheese, full fat ⁣⁣⁣⁣ 12 g fresh yeast⁣⁣⁣⁣ 40 g unsalted butter ⁣⁣⁣⁣ 180 g mozzarella or string cheese⁣⁣⁣⁣ 1 egg for egg wash⁣⁣⁣⁣ ⁣⁣⁣⁣ • Add all ingredients, except butter, to the bowl of a stand mixer fitted with a dough hook. Knead for 10 minutes on low-med. ⁣⁣⁣⁣ • Add cubed, softened butter, one cube at a time. Once all the butter is added, mix for 10-20 minutes until the dough passes the windowpane test. ⁣⁣⁣⁣ • Transfer to a lightly oiled bowl—proof at 78F/26C for about 90 minutes or until doubled in size. ⁣⁣⁣⁣ ⁣⁣⁣⁣ • Once doubled, punch down the dough to deflate. Divide into 9 equal pieces and roll into rounds. ⁣⁣⁣⁣ • Use a rolling pin to flatten the dough rounds. ⁣⁣⁣⁣ • Place 20g cheese in the middle and wrap the dough around it to seal. Roll into even balls. ⁣⁣⁣⁣ • Place on a lined baking tray, cover, and proof at 78F/26C for about 60 minutes. ⁣⁣⁣⁣ • Brush with egg wash and bake at 350F/180C for 12-15 minutes. ⁣⁣⁣⁣ ⁣⁣⁣⁣ Optional toppings: Melt a couple tbsp butter and add chopped herbs (I used rosemary.)
