Gorgeous celeriac recipe from @boroughchef. We're always so inspired by what she does with our veg. Celeriac and apple are a match made in heaven. And top the combo off with salty cheese and you've got a wonderful balance of sweet, salty, creamy, crunchy and more. Recipe Makes 2-3 portions Half a celeriac, peeled and diced about 2x2cm A few sprigs of thyme and/or rosemary 2 apples, cut into wedges A good drizzle of honey 250g cooked green lentils 1 small radicchio, washed and broken down into leaves A handful of parsley leaves, washed 2 tbsp sherry vinegar or red wine vinegar 70g feta or goat’s cheese, crumbled 1 tbsp hazelnuts, roast and roughly chopped Olive oil Salt & pepper 1. Colour the celeriac in a large frying pan with a little olive oil, salt and pepper over a medium heat. When starting to colour stir in some thyme and rosemary leaves, turn down the heat and continue cooking, stirring occasionally until the celeriac is tender 2. Colour the apples with a little oil in a large pan, turn down the heat and add 1 tbsp sherry vinegar, honey & thyme. Cook over a gently heat until the apples have softened 3. Mix everything together in a bowl including any pan juices from the apples, dress with the rest of the vinegar and a good drizzle of olive oil and spoon into bowls #LiveLifeOnTheVeg

Another GORGEOUS showstopper for your festive tables, whole baked celeriac with a Seeni Sambol inspired gravy AND a harissa salsa macha ✨ This is restaurant cooking, at home with a recipe from the woman who knows how to do the most magical things with humble ingredients. ‘This dish was inspired by my trip to Sri Lanka where I discovered seeni sambol - a caramelised onion condiment with curry leaves and plenty of cinnamon that was served on the side of basically everything and 10 times out of 10 made it infinetly better. 🧑🏾‍🍳 MasterClass Lesson Seven 🥄 Celeriac Purée This basic technique can be applied to plenty of other veg to create lovely smooth purées that elevate your dishes. Ingredients: - celeriac 1 - double cream 300ml - miso 1-2 tsp 1. Skin celeriac and dice 2. Add to roasting tin with oil and seasoning. 3. Roast at 200°C for 30 mins with foil on then for another 10 with foil off 4. Infuse cream in the meantime - this is the time to add whatever flavour you want - I love adding miso to celeriac because it gives it a really umami undertone. Add cream to a saucepan along with any flavours you’d like to infuse (e.g. garlic, rosemary, thyme, miso etc.). Heat very gently for about 15 minutes, don’t let it boil. 5. Pass cream through a sieve. 6. Add celeriac to a blender with a little bit of the cream, add more cream if the celeriac needs loosening after a bit of blending.  7. If you are using something like a nutribullet, let everything cool before you blend it - otherwise the liquid will explode over your face and you’ll be really mad at me. 8. Always pass purées through a sieve to make sure they’re as smooth as can be.  9. Plate this however you like, a drop roche, a swoosh, a splat or a smear. 10. My new fave steak 🥩 Did anyone else not know that celeriac is the bulb that celery grows from?? Or maybe I’ve been living under a rock x Anyway these celeriac steaks are so good, they make a meaty base to pour over the delicious sauce 💓💓 enjoy!! Ingredients (serves 4 but double up for a dinner party) For the steaks: 2 large celeriac Olive oil Salt & pepper For the sauce: 100g butter 1 small shallot, finely chopped 1 garlic clove, crushed 1 tsp nutmeg 1 tsp cayenne 1 bunch parsley    1. Preheat oven to 170 °C Pierce celeriac all over with a fork then rub with olive oil, salt, pepper. Roast 2¼ to 2¾ hrs, basting every 20 mins, until deeply browned and soft. Let rest 15 mins, then slice into 2cm steaks ready for frying.  2. Meanwhile, make the sauce. In a small saucepan over low heat, melt butter with shallot, garlic, nutmeg, cayenne, salt & pepper. Cook for 10 mins until shallots soften & butter browns slightly. Take off the heat and stir in cream and parsley. Don’t worry if it looks split, it’s meant to be like that! 3. On a high heat, fry the steaks in olive oil for a few mins on each side until browning on the edge. Blødt, cremet indre 😋 Pensl fx med smør og drys med havsalt og hvidløgspeber 🧄 Og server fx med sesamkartofler, en lækker bønnebøf og en dip eller creme til 🎯 DET.ER.SÅ.GODT! 💥 Opskriften får du lige her ~ HUSK at GEMME, DELE OG LIKE opslaget! 🙏🏼 🔥 HASSELBACK KNOLDSELLERI 🔥 Mængde: 1 medium knoldselleri til 2 personer ✔️ INGREDIENSER 1 knoldselleri Ca. 2 spsk smør Havsalt Groft sort peber eller hvidløgspeber Frisk rosmarin eller frisk timian ✔️ FREMGANGSMÅDE * Tænd ovnen på 200 grader varmluft. * Skræl knoldsellerien og halver den. * Læg de halverede knoldseller med skærefladen nedad og stik to grillspyd el. lign. vandret og i hver sin side gennem knoldselleriet et par cm fra bunden. * Skær tynde skiver oppefra og ned til grillspydene. * Læg de halverede og ny hasselbacksnittede knoldselleri i en ildfast fad beklædt med bagepapir. * Smelt smørret og brug ca. halvdelen til at pensle knoldselleriene.
