Coconut-Poached Cod with Garlic, Lemon & Dill 🐟🥥 A delicate, fragrant dish that’s rich in flavor yet light and nourishing—perfect over rice or orzo for a comforting Mediterranean-inspired meal. Credit: @emilyeggers ingredients 2 Cod fillets 1-2 tablespoon Olive Oil 1 can Unsweetened canned coconut milk 14 ounce can 4 cloves Garlic smashed 1 teaspoon Ginger grated 3 tbsps Fresh Dill finely chopped 1 Lemon half sliced, half for squeezing Chili Garlic Oil for garnish Instructions - Pat the cod fillets dry with a paper towel and season cod on both sides with kosher salt and black pepper. If there is skin on the fillets, you may wish to remove it before cooking. - In a medium sized pot or a small saucepan with tall enough sides, heat olive oil over medium heat. Add smashed garlic and grated ginger, sautéing until fragrant and slightly browned. - Add about 4 slices of lemon to the base of the pan on low heat, then place the cod filets on top of the lemons. - Pour in the coconut milk, add the fresh dill along with salt and pepper, and gently stir to combine the flavors. Bring the coconut milk to a gentle simmer. - Let the cod simmer in the coconut milk for 8-10 minutes or until the fish is opaque and easily flakes with a fork. The cooking time on this may vary based on thickness of the fish. Baste the cod loins with the coconut milk occasionally/as needed if it is not submerged. -Adjust the seasoning if needed. Squeeze a bit of fresh lemon juice from the remaining half of the lemon over the poached cod just before serving. - Serve the poached cod over a bed of rice or orzo, spooning some of the coconut milk poaching liquid on top until it is brothy and soup-like. Garnish with additional fresh dill and chili oil. Light, flavorful, and comes together in less than 20 minutes. 🐠 Pair these delicious cod fillets with pretty much any side dish, like rice, pasta, rosasted veggies or a salad for the perfect summer meal. Easy Pan Fried Cod Recipe: 👇🏻 Ingredients: ▪️4 Cod Fillets, thawed and patted dry ▪️4 TBS. Butter, divided ▪️Olive Oil ▪️Salt ▪️Lemon Pepper ▪️Smoked Paprika ▪️Garlic Powder ▪️Cayenne Pepper ▪️Juice of 1-2 Lemons, plus slices for garnish ▪️Fresh Parsley, chopped for garnish 1. Thaw the cod and place on a plate. Pat dry with a paper towel. 2. Season with salt, lemon pepper, smoked paprika, garlic powder and cayenne pepper. Drizzle with olive oil. Rub both sides of fish well to evenly distribute the spices. 3. In a skillet (preferably stainless steel), add 2 TBS of butter. Once melted, add 2 fillets to the hot pan. Cook for about 2 minutes. Flip and cook for another 2 minutes. If it feels stuck when you’re ready to flip, then give it another minute to cook, then flip. 4. After flipping, spoon up some of the butter in the pan and pour it over the fillets as they’re cooking. With about a minute left on the flipped side, squeeze the juice of 1 lemon over the fillets. Place on a separate dish. 5. Pour the butter and juices into a small bowl to reserve for later. Scrape off any excess pieces in the pan and wipe it down if needed. It’s best to start again with a clean pan. 6. Add another 2 tbs of butter to the cleaned pan. Cook the other 2 fillets the same way you cooked the first two fillets. 7. Plate the cooked fillets. Pour the reserved juices on top. Garnish with lemon slices and chopped parsley. Serve with rice, pasta, roasted veggies or a salad.
