Cookie 101: Honest tips and tricks from a home baker🫶🏻 ✨BUTTER TEMPERATURE MATTERS MORE THAN YOU THINK: • Cold butter cubes → thick, chunky, bakery-style cookies • Soft or melted butter → thinner, flatter cookies Your butter choice literally decides the texture before baking even starts. ✨FROZEN VS ROOM TEMPERATURE DOUGH BALLS: • Frozen cookie dough balls → thick, puffy, less spread • Room temperature dough balls → thinner, more spread If you love chunky cookies, freezing is your best friend. ✨TO CHILL OR NOT TO CHILL? •Want thinner cookies? You can bake the dough right away but chilling for at least 2–3 hours still improves flavor • Want thick cookies? Chill first, then freeze before baking. That’s the real secret to height and structure. Chilling develops flavour. Freezing controls spread. ✨BAKING IS WHERE MOST MISTAKES HAPPEN: You can follow a recipe perfectly… and still mess up at the baking stage. Most home bakers: Overbake Or panic and underbake. I personally don’t walk away from the oven. I bake at 165–175°C (fan oven) until: • The edges are golden brown • The center still looks slightly soft That soft center is exactly what you want. ✨SOFT CENTER DOESN’T MEAN UNDERCOOKED: •Cookies continue baking on the tray after you remove them. •They need about 30 minutes to fully set. •If your cookies are already hard in the center when you take them out, they’re overbaked and they’ll become even firmer once cooled. ✨DON’T OVERMIX: •Once flour goes in, mix just until combined. Overmixing develops too much gluten and makes cookies tough instead of tender. ✨FOR THAT BAKERY LOOK: • Gently bang the tray while cookies are still hot for crinkly tops. • Reshape immediately using a large round cookie cutter while they’re still soft. Yes, you can fix uneven cookies. Always😉 ✨MY PERSONAL FAVORITE TRICK: Add extra chocolate chips/chunks on top immediately after baking while the cookies are still hot. BROWNED BUTTER ✨ that’s all. 👉🏼2. Cornstarch. I’ll never go back to being a non believer of cornstarch in cookies! It creates that fluffy texture and keeps them soft like store bought cookies! I add about 20-25g in all my cookies! 👉🏼3. Chilling/freezing. This is a big key to getting this extra tall shape for cookies! It helps the cookies bake in a way that gets them perfectly browned on the outside, and soft and gooey on the inside. I usually freeze my cookie dough balls overnight when I’m looking to get this tall shape! 👉🏼4. Shaping-always shape your cookie dough into very tall balls, like cylinders! This makes sure they don’t spread out as easy and they stay nice and tall in the middle! 👉🏼5. High temps! I bake my cookies at a higher temp, typically 375-390 degrees F. This helps the cookies cook quicker on the outside and keep their shape, whereas a low and slow method can make them spread out and flatten down. I have a few 👩‍🍳 But first, make sure you’re following @tismtreats for all the baking tips! 1. 1 great tip for sweet bakery style cookies is to finish them off with a sprinkling of flakey sea salt! This balances the flavors BEAUTIFULLY and makes them just a little fancier 🥰 (You can comment Salt if you want a link to my flakey salt I get on Amazon!!) 2. Cornstarch. This wasn’t always in my cookie recipes, but it is these days after seeing the difference it has made. Cornstarch helps your cookie keeps its fluffy texture while also staying nice and thick! I use it in all my cookie recipes. A couple of tablespoons added in can make all the difference! 3. Refrigeration, or freezing. I always freeze my cookie dough balls so they retain their tall shape! However, if you don’t mind a flatter cookie, you don’t always have to do this. And on the other hand, Refrigeration helps the cookie dough balls develop a deeper flavor and set up nicely! My cookie tips for thicker chunky cookies ⬇️ Here is some of my tips to achieve a thick cookie: * using a recipe with a lower butter to flour ratio. * Always use cold butter. * Adding mix-ins such as biscuits & nuts for your cookie will make them appear thicker. * Freezing your cookies at least 24 hours before baking will allow the flour to absorb the fats in. * Form your cookie dough in a skinny dome shape and freeze. * Baking at a high temperature such as 180c. * Not over baking the cookies. Instead take them out as soon as you see the outside is cooked. Leave to cool for at least 10 minutes. This will allow the cookie to continue cooking and set properly. The difference tip #2 makes is 🤯🤯. Read on!! ⬇️⬇️⬇️ Throughout two decades of food blogging, I have received thousands of messages about cookies. How to get them to flatten perfectly or how to prevent them from flattening too much? Why do they burn on the bottom? WHY AREN’T THEY TURNING OUT?? While there are many answers to these questions, the three tips in this video are almost always the ones that end up solving most reader’s cookie conundrums. 🍪 I didn’t touch on convection vs standard bake in this video. In my particular brand of ovens, cookies don’t turn out the same using convection, so I don’t use it. But if you do, it is recommended to lower the oven temperature by 25 degrees from what the recipe states (and if using convection, usually you can bake several racks of cookies at one time). 🍪 Did you see in the video how each cup of flour measured in different ways yielded vastly different weights?? That can seriously alter the outcome of cookies (and other baked goods!). 🍪 I know people will have strong opinions about this because many of you are spoon-and-sweepers. 😉 First and foremost, you should ALWAYS defer to the weight measures given in a recipe (any baking recipe worth its salt should offer tested weight measures, in my opinion 🤷🏼‍♀️). If a recipe doesn’t give weight measures, check to see if the recipe author specifically says how they measured the flour to test the recipe. If they don’t offer this info, the fluff-scoop-and-level method is my recommended volume measuring method. 🍪 Lastly, comment “scale” and I’ll send you a link to the kitchen scale I use and HIGHLY recommend. When I worked in a bakery, inverted sugars were part of how we kept cookies soft and fresh in the case longer, without changing the bake or sacrificing flavor or texture. Inverted sugars (like molasses, honey, and syrups) are hygroscopic, meaning they attract and retain moisture. In cookie dough, this slows moisture loss and delays staling..which is exactly what you want when cookies aren’t eaten the same day. This is especially useful for microbakeries, cottage bakeries, farmstands, and anyone selling cookies that need to stay soft beyond a few hours. How to implement inverted sugars in cookie recipes: • Replace 10–25% of the granulated sugar with an inverted sugar • Molasses works well in spice, ginger, chocolate, and brown sugar–based cookies • Honey or light corn syrup are great for sugar cookies and chocolate chip • Maple syrup works ❌maple sugar does not Start small. You’re adjusting moisture retention, not sweetness. 🟢Inverted sugars help cookies stay soft and fresh longer. It’s one of those quiet bakery tricks that makes a big difference.
