SWMy life is instantly happy when I’m having cookies in any form 🤎
This is Cookie Pie in a Tin 🍪✨
And yes… this measurement is for 2 tins (same size as shown in the video) because I know it will disappear in a heartbeat sooo 😌😂
Ingredients:
• 1 cup unsalted butter (softened)
• 1 cup brown sugar
• ½ cup white sugar
• 2 eggs
• 1 tsp vanilla essence
• 2 ½ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp salt
• 1 cup chocolate chips / chunks
• Optional: Nutella / Biscoff / caramel filling
Method:
1. Cream butter and both sugars until light & fluffy.
2. Add eggs and vanilla, mix well.
3. Sift in flour, baking soda & salt.
4. Fold in chocolate chips.
5. Scoop big portions into lined baking tins (add filling in the center if using).
Bake at 180°C for 30–35 mins
Crispy outside, gooey inside 🤤

FINUTELLA STUFFED COOKIE PIE 😍
It’s been a while since I posted a cookie pie, and we all need a cookie pie in our lives 😘
The cookie dough is super soft and gooey and loaded with chocolate chips! Stuffed with a thick layer of Nutella 🤤
Although feel free to use any spread you want 🙌
Sound on for full instructions 🔉
All you need is:
200g unsalted butter, softened
250g light brown sugar
1 large egg, room temp
1 tsp vanilla extract
320g plain flour
1/2 tsp bicarbonate of soda
200g chocolate chips + some for the top
350-400g Nutella
Bake 180C/160C (fan) 25 mins - allow to cool fully in the tin
Tin size: 8” springform pan

FIDUBAI STYLE CHOCOLATE COOKIE PIE 😍
Soft chocolate chip cookie dough, stuffed with a crispy, gooey, pistachio filling! This cookie pie has so many flavours and textures and it absolutely delicious 🤌
All you need is:
200g unsalted butter, softened
250g light brown sugar
1 large egg, room temp
1 tsp vanilla extract
320g plain flour
1/2 tsp bicarbonate of soda
200g chocolate chips + some for the top
300g-350g Pistachio crème spread (I used 400g)
130g Kataifi dough (toasted in 10g of salted or unsalted butter)
(I’ve reduced the the amount of pistachio spread & butter in the filling in attempt to make the sides of the cookie slightly less greasy)
Method
For the filling:
Melt 10g of butter in a large pan, then toast the katafi until golden and crisp and transfer into a bowl.
Mix with the pistachio creme until fully coated and set aside.
For the cookie dough:
Beat softened butter with light brown sugar until light & fluffy.
Beat in the egg & vanilla with a spatula (I find it turns less cakey when I beat this by hand)
Fold in the flour, bicarbonate of soda and salt until just combined, then fold in the chocolate chips.
To assemble:
Set aside 1/3 of the dough for the lid.
Press the dough into a lined 8” springform tin and spread it out evenly, making a lip around the edge.
Add the pistachio filling & level it out, then place the remaining cookie dough on top and seal the edges making sugar there’s no gaps. Sprinkle more chocolate chips on top.
Bake at 180C/(160C fan) for 25-30 mins then allow to cool fully before slicing it.
