That’s y u never know till u try. These came out fire. Texture on point along w/ the taste. Def try it ! You can find more recipes like these inside my 1:1 coaching. You can exceed your goals & enjoy every single meal while doing it. Link in my bio to apply 🫶🏾 INGREDIENTS 500g low-fat cottage cheese blended 300g flour (I used @fit.flour for extra protein| dc INAYAH) 8g baking powder 2 large eggs 225g zero fat mozz 200g uncured turkey bacon 1tbsp avocado oil Oregano Garlic powder Salt 189cals per biscuit 30g P 12g C 4g F 👩🏽‍🍳RECIPE Whisk flour, baking powder and seasoning Add blended cottage cheese, eggs and oil and mix until a sticky dough forms Mix in chopped up bacon & fat free mozz Let rest for 10 mins Pre heat oven to 425°F and line a baking sheet with parchment paper Scoop out 12 equal circles of dough onto the baking sheet Bake for 18 mins or until lightly golden Allow to cool and serve! #cookingathome #homemadebiscuits #easymealprep #breakfastmealprep #mealprepideas

These remind me of German pancakes because they puff up real big when baking, but settle as they cool. Don’t worry, it’s normal. I forgot to film them as I took them out of the oven to show you. Dang it! On the menu this week👇 📣: A little reminder… you deserve satisfying AND fuelling meals (and snacks!) everyday, such as: 🍞 carbs for energy 🍗 protein for satiety 🥑 nourishing fats 🥬 plenty of colour (hello plants!) Oh, and a sprinkle of fun!!! 🍫 AIR FRYER MEATBALL VERMICELLI SALAD 🍜 Serves: 3 Prep time: 20 mins Cook time: ~10 mins Ingredient: Meatballs 500g lean pork or chicken mince 2 garlic cloves, minced 1 tbsp grated ginger 2 tbsp finely chopped coriander 2-3 chopped spring onions, sliced 2 tbsp fish sauce 1 tbsp honey (optional) ¼ cup breadcrumbs (or panko) Optional: sliced chilli/ pinch chilli flakes Salad bowls: 150g vermicelli noodles 1 large carrot, julienned 1 Lebanese cucumber, sliced into matchsticks 2 cups shredded lettuce or wombok Handful fresh herbs (mint + coriander work beautifully) Zesty lime dressing (optional): Juice of 1½ limes (~4 tbsp) 1 tbsp extra virgin olive oil ¼ cup water 2 tbsp fish sauce ½ tbsp honey/ maple or brown sugar 1 clove garlic, crushed ½–1 red chilli, finely diced Method: 1. Make the meatballs: In a bowl, combine all meatball ingredients. Mix until just combined. Roll into small balls (about 1 heaped tbsp each). Spray with extra virgin olive oil spray then air fry at 190°C for 10–12 minutes, shaking halfway, until golden and cooked through. 2. Prepare noodles and veggies: Cover vermicelli with boiling water and soak for 3–4 minutes until soft. Drain and rinse under cold water (this stops sticking and keeps them fresh for meal prep). Meanwhile chop and prep veggies and/or herbs (if using fresh) and set aside. 3.Make the dressing (optional): Whisk everything together until balanced. Taste and adjust (more fish sauce for saltiness, versus more lime for “zing” and freshness, or more honey for sweetness). 4.Assemble: In containers or bowls add the cooked vermicelli as the base, layer veggies and herbs, top with warm (or cooled) meatballs then sprinkle with chilli flakes + extra herbs. Keep dressing separate if meal prepping. Today’s meal prep includes: ✨ ½ cup of rice ✨ Steamed broccoli ✨ 4 oz Cajun Style Andouille Smoked Sausage from Hillshire Farm (made with pork, turkey & beef) The Cajun sausage adds so much flavor and the broccoli helps keep the meal balanced and satisfying. Estimated calories: about 410 calories per bowl Remember, meal prep doesn’t have to be complicated. Use what you have, portion it out, and stay consistent. PINEAPPLE TERIYAKI MEATBALLS WITH RICE & BROCCOLI Ingredients 2 packages fully cooked pineapple teriyaki chicken meatballs (Trader Joe’s) 3/4 cup Soyaki sauce 2 bags Trader Joe’s frozen jasmine rice 24 oz broccoli florets Pineapple chunks (fresh or canned, drained) Instructions: Cook rice according to package directions. Cook meatballs in the air fryer at 350°F for 12 minutes. Add Soyaki sauce to a pan over medium heat and let it warm. Add pineapple and cook for 2–3 minutes. Add cooked meatballs and let the sauce cook down to your liking, about 4–5 minutes.
