For the first 7–10 days (sometimes a little more, depending on what you’re fermenting), jars without an airlock need opening daily to release built-up gas.�It’s created naturally as good bacteria get to work transforming vegetables into something more nourishing and longer-lasting. Fermentation isn’t fast food — it’s a practice in patience.�Giving it time allows flavours to develop, textures to soften, and nutrients to become easier for our bodies to absorb.
