🥤 This is how a ginger bug makes natural soda in any flavour you like. Through wild fermentation, using just raw ginger, sugar, and water, you can create your own probiotic soda at home. On the skin of ginger live wild yeasts and lactic acid bacteria. Feed them sugar, and the magic begins: ✨ Yeasts turn sugar into carbon dioxide and a little ethanol ✨ Lactic acid bacteria create lactic acid for tang and preservation Seal it in a bottle to trap the carbon dioxide and you’ve got real, naturally carbonated soda. My favourite flavours: 1. just ginger 2. black currants to make cassis (from my garden) 3. red currants (from my garden) 4. cranberry 5. green tea How start a ginger bug? A ginger bug is like a sourdough starter. You need to feed it to keep it alive. Ginger bug starter 🍹✨ Ingredients: 350 ml clean water 1 tbsp unpeeled fresh ginger, chopped (important: must be organic!) 1 tbsp cane sugar Method: 1️⃣ Chop the unpeeled ginger into small pieces (don’t peel, because the skin has wild yeasts!). 2️⃣ Add the water, ginger, and sugar to a clean glass jar. Stir vigorously to dissolve the sugar and introduce oxygen. 3️⃣ Cover loosely with a cloth or lid and keep at room temperature. 4️⃣ Every 24 hours, feed with 1 tbsp chopped ginger and 1 tbsp sugar. Stir well. 5️⃣ Repeat daily until you see bubbles, a slightly yeasty smell, and fizz when stirred — usually after 3–5 days. ✨ Once active, store in the fridge and feed once a week. How to make a ginger bug: Day 1: add 2 tablespoons of chopped ginger (keep skin on as there's lots of yeast and bacteria on it that we want to cultivate), 2 tablespoons sugar, and 2 cups of water into a jar. Cover with coffee filter or paper towel and place into a dark place overnight Day 2. add 1 tablespoon chopped ginger and 1 teaspoon sugar. You might see some bubbles starting to form Day 3-10ish. Repeat day 2 procedure. Your ginger bug will probably go cloudy, and even stop producing bubbles for a few days. This is normal, it's going through a phase called microbial shift where some of the weak yeast strains start to die off and the strong ones are multiplying. We want that. It's not dead, just continue feeding it until it starts producing bubbles after every feeding. Cloudiness is also normal. This process might take 5 days, or 10 days of feeding and monitoring, depending on your climate and environment. I have a highlight that does through the whole 10 day process to help guide you! Mango Ginger Fermented Soda Gut-friendly, naturally fizzy, and made with real ingredients. If you’ve been curious about fermentation, this is one of the easiest places to start. The ginger bug recipe can be found on my page. Ingredients: 1 cup ripe mango (fresh or thawed frozen) 4 cups filtered water 1 tbsp fresh grated ginger 2–4 tbsp natural sweetener (raw honey or maple syrup) ¼ cup fresh ginger bug liquid (strained) Instructions: Blend mango with 1 cup of water and ginger until smooth. Strain using a cheese cloth. Pour into pressure safe swing top bottles and add remaining water sweetener and, ginger bug liquid. Rotate the bottle back and forth to ensure everything is evenly mixed. Ensure 1 inch of head space is left at the top. Seal the bottle and place on the counter to ferment for 2-3 days or until it becomes fizzy. Burp bottles daily to avoid too much pressure. Place in the fridge once it has finished fermenting. Save this for later and follow along for more fermentation recipes in my series. Disclaimer: this is a traditional homemade fermented beverage. Lo starter home made non lo considero una #fermentazionespontanea perché non è presente la prima parte di colonizzazione ma si parte direttamente da una fase (praticamente) esponenziale. 🍾Il ginger bug viene usato quando vogliamo fare una fermentazione veloce, ottenere una buona quantità di gas e un sapore di #fermentato molto poco marcato. Ad esempio si usa per fare #gingerbeer e #aranciatafermentata 🤔 Perché si fa con lo zenzero? È una #fermentazionelattica ? Se sì devo usare sale? Perché devo rinfrescarlo spesso e non farlo fermentare a lungo come con le #verdurefermentate ? Devo tapparlo o chiuderlo con un tovagliolo? Devo sbucciarlo? Devo aggiungere acqua? Q: how do you store your ginger bug? Where do you store it? A: when you're start making your ginger bug, you will be leaving it at room temperature. Making a ginger bug takes many days to make*, and the whole time, you leave it at room temperature in a warm dark place. Your ginger bug loves warmth to kick start the fermentation! After you have successfully made your ginger bug, you are ready to make soda! Congratulations! After you have made your first soda, we move in to maintenance. You will store your ginger bug in the fridge until you are ready to make soda again. When you are ready, take it out of the fridge, feed it a spoonful of sugar and top it off with water, and leave it at room temperature until it gets bubbly again. After you see bubbles, you can use it again! Always leave some of your ginger bug behind to place back into the fridge until next time! If you aren't planning on making a ginger bug soda, then give it a feeding of just a spoonful of sugar every 1-2 weeks so it has food to feed on while in maintenance mode. That's all! Want to Start Fermenting? Make a Ginger Bug Probiotic Starter 🫙🫚 Autumn is preservation season! 😊 and fermentation is one of my favourite methods for ensuring I can store and prolong the shelf life of the summer garden harvests to use throughout winter. 🫙🍅🌶️🫚 With only three ingredients, a ginger bug is one of my staple starter cultures as it’s just so easy to make. 😊👍🏻🫚 First, I chop or grate the ginger, leaving the skin on as it contains the beneficial bacteria and wild yeasts we need for fermentation. 🫧🫙 I use organic or home grown ginger if possible, as conventional types are often treated, and only use filtered water as chlorine will reduce good bacteria. 😕 I mix that with unrefined cane sugar and water as a food source, shake well, remove the lid and replace with a cotton cloth, or something similar, and place it at room temp or above for 24 hours. 🫙👀 I then feed the ginger bug extra sugar and ginger daily for around 5 days and as the bacteria and yeast continue to consume the sugar they emit more and more carbon dioxide in return, which creates all the bubbles. 🫚🫧 My Ingredients To a jar I add: 6 tsp of shredded or chopped ginger (with skin on) 4 tsp of organic unrefined sugar Top up the jar to around 3/4 full with filtered water Then add 2 tsp of ginger and 2 tsp of sugar daily for 3-5 days. The ginger bug can then be used as a starter culture for making wild sodas and more, and any left overs can be stored in the fridge to slow down fermentation and prolong its use. 😊🫙 I’ll be sharing my recipes for using the ginger bug in further videos that will be coming soon, so keep an eye out for those and let me know if you’ll be making one? 😊 #fermentation #gingerbug #growyourown #guthealth #gardeningtips
