Place in baking dish. Mix cream, egg & spices. Pour over vegetables. Add cheese on top. Bake 180°C for 20–25 min until golden. Cooked and blended veggies are often much easier to tolerate. 👉🏼 Save this for later, and share it with someone who loves mac & cheese but wants more vegetables on their plate. 🍠 Purple Sweet Potato Mac & Cheese 450 g cooked purple sweet potato (about 2 to 2 1/2 cups mashed) 3 cups cauliflower florets 1 whole head garlic 1/2 cup raw cashews, soaked 1/4 cup nutritional yeast 1 tbsp shiro (white) miso 1 tsp onion powder Juice of 1 to 1 1/2 lemons, to taste 1 cup unsweetened dairy-free milk 1/2 to 3/4 cup vegetable or chicken broth Sea salt and black pepper, to taste 500 g pasta of choice Chopped fresh parsley or cilantro, for topping Preheat the oven to 400°F (205°C). Roast the cauliflower florets, whole head of garlic (top sliced off), and purple sweet potato for about 30 minutes, or until the cauliflower is golden and the sweet potato is fork-tender. Scoop out the sweet potato flesh and measure 450 g cooked. Cook the pasta in well-salted water until just al dente, reserve 1 cup pasta water, then drain. Add the roasted sweet potato, roasted cauliflower, squeezed roasted garlic, cashews, nutritional yeast, miso, onion powder, lemon juice, dairy-free milk, 1/2 cup broth, salt, and pepper to a blender and blend until smooth. Thin with more broth or pasta water as needed until the sauce is thick but pourable. Toss with hot pasta for 1–2 minutes until glossy and well coated. My super-yum refined sugar free lemon & coconut slice! 🍋 You can find my full detailed, step by step printable/pinnable recipe for my lemon slice on my website (link in bio!). I’ll include a summary of the recipe below 👇 LEMON & COCONUT SLICE 🍋🥥 For the base - 1 cup rolled oats - 1 cup desiccated coconut - 1/2 cup almonds - 8 pitted medjool dates (softened in warm water for 5 minutes if needed) - 1/4 cup melted coconut oil (plus 1 tbsp if needed) - Pinch of sea salt For the topping - 1 cup coconut cream - Juice of 3 fresh lemons - 1 tbsp grass fed gelatin (bloomed in 1/4 cup water) - 1/4 cup raw honey Directions 1. Blitz all ingredients for the base in a food processor, adding 1 tbsp more of coconut oil if needed. Then press the base down hard into a lined 8×8 (brownie) tin. Put in the fridge for 1 hour to set. 2. Mix all ingredients (aside from the bloomed gelatin) until well combined in a small bowl. Gently heat the gelatin until dissolved either in a small saucepan over low heat, or in a microwave safe ramekin in short 10-15 second bursts. Once dissolved, stir into the topping mixture and quickly pour over base. Set in the fridge for 2-3 hours. 3. Once set, slice and top with a sprinkle of coconut and lemon zest. Store in the fridge.
