Drink immediately (best for microbial vitality) or refrigerate up to one week. Your grains remain alive and reusable indefinitely — if properly maintained. Not all kefir grains are microbiologically equal. Strain diversity, handling, freezing, and sourcing all influence composition and stability. The quality of your fermentation begins with the quality of your grains. The simplest way to make your own kefir at home 👇 While this method will only work for a couple of batches at most, it’s a great way to start fermenting at home without making the commitment to caring for kefir grains. All you need is a jar, some kefir and milk. For every 250ml of milk you’ll need about 1tbsp of kefir. Mix the two together in a glass jar and leave at room temperature for 24 hours then place in the fridge overnight ready to use for breakfast the next day. My favourite way to enjoy it is mixed into yogurt with berries (I use frozen this time of year) and as many nuts and seeds I can manage from my diversity jar to get me to my 30 plants goal. I know fermentation can be intimidating but I hope this shows just how easy it can be to get started and support your gut health this winter. KEFIR PREMIÈRE FERMENTATION 🔽 – la base indispensable Le kéfir est une boisson naturellement fermentée, riche en probiotiques, qui soutient la digestion, équilibre le microbiote et participe au bien-être intestinal. Il est aussi apprécié pour son côté rafraîchissant, peu sucré après fermentation, et sa composition simple, sans additifs ni conservateurs. En hiver c’est un super allié surtout pour se remettre des fêtes et soulager sa flore intestinale . ▶️Ingrédients : • 30 g de grains de kéfir • 30 g de sucre • 1 figue sèche • 2 tranches de citron • 900 ml d’eau ▶️Préparation : Verse 900 ml d’eau dans un bocal. Ajoute le sucre et mélange jusqu’à ce qu’il soit bien dissous. Ajoute ensuite les grains de kéfir, la figue sèche et les tranches de citron. GÄRmentation Ep. 04 Kefir (Anzeige/Ad) This kefir is so much better then the once you can buy in the store. Because where ever I looked I could only find pasteurized kefirs which are just not as good as a real kefir so I decided to make my own one because it’s so easy and also much cheaper once you have the kefir grains which you can use FOREVER. I got my kefir grains from @fairment and if you also want to start making your own gut healthy drinks you can save 15% with my Code CLEMS_KITCHEN_06 or over the link in my bio. Recipe: - 500ml - 1 tbsp kefir grains ‼️make sure to only use Plastic or wood and no stain less steel because that could react with the acid and would be bad for the fermentation Mix in a jar and cover it loosely with a lid, a towel or such a special lid which lets the air escape Let it sit for 24-48h and make a taste test after a while to sea when you like the sourness The kefir should be thicker now and maybe even seperated but if that’s the case just mix it When it’s done give it through a sieve and fill it in a bottle Store the bottles in the fridge and use the grains for your next kefir If you don’t want to use them right away just store them with some milk in the fridge to keep them there for a few more days (week) or even put them in he freezer if you want to store them for a longer time Have fun and enjoy!😊 #kefir #fermentation #saltysalt #healthydrink #fairment

KEFIR DE FRUIT – Deuxième fermentation (F2) Après la première fermentation, le kéfir commence à buller 👉🏼c’est le signe que les ferments sont bien actifs. On filtre ensuite la boisson en récupérant soigneusement les grains de kéfir, qui seront réutilisés pour les prochaines préparations. Le liquide est ensuite mis en bouteille à fermeture mécanique pour la 2 ème fermentation. Ici, j’ai ajouté du jus de pamplemousse frais et 3/4 feuilles d’hibiscus pour apporter du goût et relancer légèrement la fermentation. Pour une autre version, les rondelles de citron de la première fermentation peuvent être mixées puis ajoutées au kéfir. La bouteille est ensuite laissée à température ambiante pendant environ 24 heures. Refreshing fermented Summer Lemonade: Homemade Water Kefir 🍹 Say hello to your new favorite summer refresher - water kefir! 🤗 It’s a powerhouse of gut-loving probiotics that can improve digestion, boost immunity, and support your overall gut health. ✨ How to: 1. Combine about 800 ml of filtered water with 50 g of organic cane sugar in a clean glass jar or bottle, leaving some space to the top. (Don’t worry, the grains will consume almost all sugar during fermentation!) 2. Add in some freshly sliced lemon and more juice if desired. 3. Then add your favorite type of dried fruit (about 40 g), I used pineapple and mango but you can also use figs, raisins etc as well as other fresh fruits, juicy berries and fragrant herbs - get creative with the flavors! 4. Add in 1-2 tbsp of water kefir grains (not milk kefir grains). 5. Let the mixture ferment with a lid for for 24-48 hours. The longer you ferment, the fizzier it gets! (Carefully open the bottle in-between to avoid an explosion!) 6. Strain out the kefir grains and your water kefir is ready to be stored in the refrigerator! 
(keep the kefir grains in some liquid with dried fruit in the refrigerator and avoid contact with metal). 7. Serve the water kefir over ice and enjoy. Cheers! PS: You can also just cover the jar with a cloth/ open lid to avoid too much pressure and then let it ferment for a second round after straining the kefir grains in a closed bottle. In a second fermentation you can add more herbs and flavors of choice to create an even more aromatic and unique flavor.
