CUKithul Pity Dessert
Serves: 2
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Ingradients
4 tbs Kithul flour
½ cup of thin coconut milk
a pinch of salt
2 pods of cardamom
1 small piece of cinnamon stick
1 clove
2 tb Kithul trickle
¼ cup thick coconut milk
Optional: raisins and cashew nuts
Method
Mix the kithul flour with the thin coconut milk until smooth, add a pinch of salt, and cook in a non-stick pan over the lowest heat, stirring constantly.
As it starts to thicken into a thick jelly, add the kithul treacle and the lightly bashed cloves, cardamoms, and cinnamon. Keep mixing, then pour in the thick coconut milk and stir until it turns glossy and properly jelly-like.
Tip into a dish, stir through raisins and cashews if you like, then chill in the fridge until set.

Day 7 - Sri Lankan Watalappan using @finchfoodsau 100% Kithul Jaggery and Kithul Treacle
Ingredients -
* 6 large eggs
* 250g grated Finch’s kithul jaggery + 50ml water
* 1 cup thick coconut milk
* 6 cardamom pods lightly crushed
* 1/4 tsp freshly grated nutmeg
* 1 pinch salt
* 1 tsp vanilla essence
* 2 tbsp cashews, chopped (optional garnish)
* Finch’s Kithul treacle (optional drizzle)
1. Melt the jaggery
* Place grated jaggery in a saucepan with 50ml water
* Heat gently until it melts into a dark syrup.
* Let it cool slightly — don’t add it hot to the eggs.
2. Beat the eggs
* In a bowl, add in eggs, vanilla, salt and lightly mix the eggs.
* Do NOT foam or overbeat — Watalappan should be silky, not spongy.
3. Combine the mixture
* Once the jaggery syrup is warm, mix into the eggs while
* Once incorporated add in coconut milk
Strain the mixture once through a sieve — this makes it smooth and creamy.
4. Steam the pudding
* Pour into a heatproof bowl.
* Cover tightly with cling wrap then foil.
* Steam for 35–45 minutes on medium heat until set (a knife should come out mostly clean).
* Do NOT boil on high heat—it causes bubbles and cracks.
5. Finish & serve
* Let it cool completely.
* Sprinkle cashews or drizzle treacle on top.
* Refrigerate for 2–3 hours for best texture.
Tips for Perfect Watalappan
* Use kithul jaggery for the original Sri Lankan aroma.
* Do NOT beat the eggs hard — bubbles ruin the texture.
* Keep heat low during steaming to avoid curdling.
* Refrigerate overnight for the best flavour.
