SCOOPABLE MANGO COCONUT CHIA PUDDING // because finding ways to make breakfast easier has been everything for me lately. i love having chia pudding prepped for those healthy fats and fiber and this thick and creamy texture makes me feel like i’m eating dessert for breakfast. i am hooked and i can’t stop making flavors! any flavor you want to see next? Pudding Ingredients ½ cup chia seeds ¾ cup plain Greek yogurt 1 cup milk of choice (coconut milk is preferred) 1¼ cups mango chunks (about 1 large ripe mango, fresh or frozen) ¼ cup unsweetened shredded coconut ½ cup coconut cream ((solid part from can)) 3 tablespoons maple syrup (can sub honey) 1 teaspoon vanilla extract Pinch of salt Toppings (optional) Greek yogurt dollop diced mango toasted coconut flakes honey drizzle lime zest In a blender, add the milk, mango, shredded coconut, maple syrup, vanilla, and a pinch of salt. Blend until completely smooth and bright. Add the coconut cream to the blender and blend again briefly, just until combined. In a medium bowl, add the Greek yogurt. Pour in the mango coconut mixture and whisk until fully smooth. Stir in the chia seeds. Let sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate overnight, until thick and scoopable. Spoon into bowls or jars and finish with your favorite toppings. #chiapudding #healthybreakfast #mangochiapudding #mangococonut #mealprepbreakfast

Great for breakfast or as a filling and tasty snack anytime of the day. ❤️Save the recipe Mango Chia Pudding : makes 4 portions (or 6 small portions) 2 cups fresh or frozen chopped mango (200g) plus extra mango to garnish 4 tablespoons oats 2 cups (500ml) milk or your choice (tinned coconut milk is great here too) 1-2 tablespoons honey or maple syrup 1 teaspoon vanilla extract 6 tablespoons chia seeds (1.5 tbsp per pot) Step 1: Blend the mango, oats, milk and honey until smooth, divide between the 4 pots. Step 2: Stir in the chia seeds and mix really well to avoid lumps. Step 3: Cover and set in the fridge for 2-3 hours. Step 4: Top with fresh or defrosted chopped mango or any other fruit and serve up. Storage- good for 2 days in the fridge.
