Ingredients • ½ gallon whole milk (make sure it’s NOT ultra-pasteurized) • ½ cup white vinegar • Optional: 1 tsp salt Instructions 1. Add the milk to a large pot and slowly heat it to 120°F (49°C), stirring occasionally so it doesn’t burn. 2. Remove the curds and squeeze out as much liquid as possible. Mix in salt here if using. 5. Place the curds in a bowl and microwave for 30 seconds. Stretch and fold the cheese a few times until it’s smooth and stretchy. 6. Form into a ball and transfer to an ice bath for 15 minutes to firm up. #mozzarella #homemade

I finally succeeded in making Mozzarella cheese at home. I wasted 2 liters of pasteurized fresh milk and 1 liter of raw fresh milk to understand why. I was quite stubborn in trying to use pasteurized milk from the supermarket to make this, even though I did use rennet. The first time I tried fresh milk, it had rennet but it still failed because I measured the temperature incorrectly. Is Mozzarell cheap where you live? Where I live, it's cheaper to make because it's quick and standard, but when I made it myself, I learned the process and part of the reason why rennet is used when making cheese, it's really special. I'm still researching how to make fresh, soft, and delicious cheese to use in salads. Soft and fresh. I dissolved 1.5 rennet tablets in 20 grams of filtered water I defrosted 2L of fresh milk (by which I mean milk I bought directly from the farm and had it delivered to my house). I didn't have enough knowledge to make it so I was instructed to put it in the freezer. I put 150 grams of vinegar into the pot, then added milk (I didn't stir) and just like that, then heated it to 32 degrees Celsius. I slowly added the rennet to the pot and stirred slowly from top to bottom (of course, still following the recipe). circular path, like a spiral). I just stir like that twice then turn off the stove and leave for about 7 - 10 minutes. When I opened the lid, I got a mass with a texture similar to a giant pudding. I used a knife to cut into checkerboard-shaped squares so that the curds were in direct contact with the rennet. Then I stir slowly until the mixture reaches 40 - 45 minutes. Then filter the curd and keep the water hot to 90 degrees then soak the cheese block in water for about 15-20 seconds, use your hands to stretch the cheese and do so a few times until the cheese is pliable and soft. Wear a thick glove. Store cheese in a jar of cold water and use within 5-7 days. My experience is still extremely inexperienced in this field, please help me and everyone if you have experience #vykhuefoodstylist #makingcheese #mozzarella #cheese #foodblogger #foodreels

I tried making Mozzarella at home - a new challenge. You know, where I live it's very easy to buy mozzarella, it's not difficult, it's commonly sold in supermarkets. But I still want to practice making it to understand more about the process of making it. Maybe you don't know, specific cheese products like mozzarella in my area are usually very expensive. Of course, every product will have its own price and quality segment. I simply wanted to experience and understand better, so the goal was just to make cheese that can stretch when melted. Setting low expectations will not have too high expectations. #vykhuefoodstylist #foodblogger #makingcheese #mozzarella #cheese #foodreels

I ran out of mozzarella… so I made it. Here’s the homemade mozzarella recipe I used: 🧀 Ingredients: • ½ gallon raw or regular whole milk (Just make sure it’s NOT ultra-pasteurized — it won’t form curds!) • 7 tbsp white vinegar • 1 tsp cheese salt (or kosher salt) 🔥 Instructions: Pour the milk into a stainless steel pot or Dutch oven. Heat gently over medium heat until it reaches 115°F (that’s about 46°C). Stir occasionally to prevent scorching. Turn off the heat. Stir in the vinegar, mix gently to combine, and cover with a lid. Let it sit for 10 minutes to separate into curds and whey. Use a slotted spoon to scoop the curds into a bowl. Shape them into a ball or two, squeezing out as much liquid as you can. Reheat the whey to 150°F (about 65°C). Place each mozzarella ball back into the hot whey for 30 seconds at a time, then remove and stretch + fold the cheese until smooth and elastic. Repeat this 2–4 times until the cheese stretches easily and has a glossy, smooth texture. Add salt to the cheese if desired, then shape into a ball. Place the finished mozzarella in a bowl of ice water for 10–15 minutes to set. Store in the fridge in the same water or in leftover whey. It’ll keep for 1 to 1.5 weeks. **PS — Mozzarella can be a little finicky the first time you make it, I’ve got a video that really helped me. Thanks to @culturesforhealth for sending me their mozzarella and ricotta cheese making kit. I put off making mozzarella for a while, because I was intimidated by all the approximate steps involved. I’m more of an intuitive dump and stir kind of food alchemist. But, then I remembered it’s just cheese, and even if I messed it up it’d still be edible. So, here’s the final result of my first mozzarella ball. Have your ever made cheese? #amateurfoodalchemist #culturesforhealth #cheesemaking #homemadecheese #madefromscratch #cheese #cheeselover
