Gently warm the milk in a pot over low heat, stirring consistently,gently heat it until you can hold your finger for 10 seconds in it. Turn off the heat and gradually add vinegar or lemon juice while stirring, until the milk curdles and separates into solids and whey. 2. Strain the curdled milk to remove excess whey, squeezing out as much liquid as possible. 3. Mix citric acid and water in a bowl, then add baking soda to create a clear sodium citrate solution. 4. Blend the strained cheese, sodium citrate solution, butter, milk, and salt in a blender until smooth 5. Transfer the cheese mixture to a heatproof bowl and double boil it for 5 to 8 minutes. 7. I finally succeeded in making Mozzarella cheese at home. I wasted 2 liters of pasteurized fresh milk and 1 liter of raw fresh milk to understand why. I was quite stubborn in trying to use pasteurized milk from the supermarket to make this, even though I did use rennet. The first time I tried fresh milk, it had rennet but it still failed because I measured the temperature incorrectly. Is Mozzarell cheap where you live? Where I live, it's cheaper to make because it's quick and standard, but when I made it myself, I learned the process and part of the reason why rennet is used when making cheese, it's really special. I'm still researching how to make fresh, soft, and delicious cheese to use in salads. Soft and fresh. I dissolved 1.5 rennet tablets in 20 grams of filtered water I defrosted 2L of fresh milk (by which I mean milk I bought directly from the farm and had it delivered to my house). I didn't have enough knowledge to make it so I was instructed to put it in the freezer. I put 150 grams of vinegar into the pot, then added milk (I didn't stir) and just like that, then heated it to 32 degrees Celsius. I slowly added the rennet to the pot and stirred slowly from top to bottom (of course, still following the recipe). circular path, like a spiral). I just stir like that twice then turn off the stove and leave for about 7 - 10 minutes. When I opened the lid, I got a mass with a texture similar to a giant pudding. I used a knife to cut into checkerboard-shaped squares so that the curds were in direct contact with the rennet. Then I stir slowly until the mixture reaches 40 - 45 minutes. Then filter the curd and keep the water hot to 90 degrees then soak the cheese block in water for about 15-20 seconds, use your hands to stretch the cheese and do so a few times until the cheese is pliable and soft. Wear a thick glove. Store cheese in a jar of cold water and use within 5-7 days. Isınan sütü ocaktan indirin. Mayayı ekleyip yavaşça karıştırarak mayanın sütün her yerine eşit şekilde dağılmasını sağlayın. Üzerini örtüp mayalanmasını bekleyin (süresi ortamın sıcaklığına göre değişiyor). Peltelenmiş süte bıçak yardımıyla kesikler atın ve seyrek dokuma pamuk veya naylon delikli torbaya boşaltın. Peyniri döktüğünüz torbayı bir süzgecin üzerine yerleştirin. Bu şekilde süzmesi için bir süre bekleyin. Ardından torbayı bağlayıp üzerine 5 kg ağırlık yerleştirin 12 saat bekletin. Ertesi gün peyniri torbadan çıkarın. Doğrayın. Küçük parçalar haline getirin. Bunun için robot kullanabilirsiniz. Bir tencerede peynir altı suyunu 75 C ye kadar ısıtın peynirleri içine atın. Tuzu ekleyin ve peyniri suyun içinde 5-10 dk karıştırarak bekletin. Ardından peyniri bez torbaya tekrar dökün. Peynirin suyunu sıkarak iyice akıtın. Peyniri torbasıyla birlikte (torbanın düğümünü çözün) süzgecin üzerindeki bir çember kalıba yerleştirin. Ve çemberin içine girebilecek boyutta (su dolu kavanoz olabilir) peynirin üzerine 2 kg ağırlık koyun. Bir gün boyunca bu şekilde süzünce peyniri kalıptan ve bezden çıkarın. Temiz bir tahta zemin üzerinde üzerini ince bir bezle örtüp 20 C bir ortamda iki gün bekletin. Ardından etrafını kaya tuzuyla tuzlayıp hava almayacak şekilde paketleyip buzdolabında 4-5 gün bekletin ve sonrasında afiyetle tüketebilirsiniz. Peynir tazeyken sakızlığı daha çok ama tadı daha sade olacaktır. Peynirin bekledikçe lezzetleneceğini unutmayın. Say cheeeeese! 🤭😁 It’s really easy to make this preservative free mozzarella cheese at home! Give it a try and let me know how it turned out ❤️ Heat 2 Litres Full Fat Milk. (Use Full fat Dairy Milk, Not the packaged ones or tetra pack) Heat it till it’s warm. Should not be very hot. Now switch off the flame. Add 7-8 Tbsp of Vinegar to this. 1 Tbsp at a time. Keep mixing throughout. Now remove the cheese and squeeze out all the water. In a bowl, Add very hot water with salt, And drop your cheese into this. Wait for 10 seconds, Pick it up and stretch and pull it. Repeat 3-4 times Next, Dip this in ice cold water for 5 minutes. That’s it. Mozzarella Cheese is ready!
