The NOVA classification system categorizes foods based on the extent and purpose of their processing. Developed by researchers, NOVA divides foods into four groups: unprocessed or minimally processed foods, processed culinary ingredients, processed foods, and ultra-processed food and drink products. The distinction between groups lies in the degree of industrial processing and the use of additives. The more processed or refined a food is, the more nutrients are degraded and ultimately stripped out of it, so one of the things these foods have in common, besides being super convenient and addictively delicious, is they tend to have very little to offer in terms of essential nutrients. The NOVA classification system, developed by researchers at the University of São Paulo in Brazil, is widely used to categorize foods based on their degree of processing. Ultra-processed foods belong to Group 4, while processed foods fall under Group 3. Minimally processed foods (Group 1) and culinary ingredients (Group 2) complete the classification. Ultra-processed foods are usually characterized by: - The use of multiple refined ingredients, such as refined flours, sugars, and oils. - The presence of additives, such as artificial flavors, colors, preservatives, and sweeteners. - High levels of processing, which can lead to the loss of nutrients and the creation of unhealthy compounds. - A long shelf life due to the use of preservatives and packaging techniques. - High palatability and hyper-palatable flavors, which can encourage overconsumption. In general, a healthy diet should prioritize minimally processed or whole foods and limit the intake of ultra-processed foods, as UPFs are linked to negative health outcomes like obesity, heart disease, and diabetes. In the UK, we lead Europe in ultra-processed food consumption, with a staggering 57% of our daily food intake coming from these products (PMID: 31662351). Ultra-processed foods (UPFs) are defined within the NOVA classification as foods that are industrially processed, engineered to be hyper-palatable, and nutritionally lacking. As a rough rule of thumb, if the ingredients aren’t ones you'd typically find in your kitchen, chances are it’s UPF. Research has shown that the rise of UPFs in our diets is impacting our health and the health of our gut microbiome (PMID: 31105044). The challenge lies in identifying these foods—without knowing what’s ultra-processed, assessing whether our choices support or hinder our health becomes difficult. The NOVA scale was designed for research, and like all attempts to separate things into binary categories, some foods in this category are worse than others. For example, while the soups in this video contain ingredients like emulsifiers, modified starches, and sweeteners you wouldn’t typically use at home, they are still largely made from tomato, with the canned version being a better option than the powdered variety. While processed, these options offer more nutritional value than other ultra-processed foods like processed meats, sweets, and packaged snacks.
