The day before, I feed Flora until she’s at 900–1000g. Then on baking day, I double my recipe four times, mix everything in my KitchenAid, and do all my stretch and folds at the same time. The next morning, I load the oven in two rounds — and in about an hour, I’ve got 8 beautiful loaves ready to slice, freeze, and enjoy for weeks. Total cost? Under $8. You can use a simple loaf pan — and honestly, I think it’s one of the best sourdough secrets out there 👩‍🍳✨ Here’s what I do: I line my loaf pan with parchment for easy cleanup, place my cold dough straight from the fridge inside, score it, and give it a light mist of water for steam 💦 Then I flip another loaf pan upside down on top — that’s my “lid.” Bake at 425°F for 30 minutes covered, then uncover for another 20 minutes (until your loaf hits 205–210°F inside). After shaping your dough, give it a quick spritz of water 💦 and roll the top into your toppings-seeds, oats, herbs, whatever you love 🌾. Then place it topping-side down in the banneton, pop it in the fridge ❄️ for the cold ferment, and bake as usual.
