Low temp long time pasteurization (30 mins at 145F) kills bacteria without meaningfully altering the protein or enzymes in the raw milk. Cool the milk back down below 70F before adding citric acid (1.5 tsp per gallon, dissolved in 4 parts water to acid). Dropping the pH of the milk below 6.0 starts to untangle proteins, creates the right environment for the rennet to act and prepares the curd to be stretchable in future steps. Gently bring up to 90F, stirring consistently. Remove from heat and insulate the pot or place in a water bath to maintain the temperature. Add rennet (read package for correct amount per gallon - not all rennet is the same) and let the pot sit undisturbed for 10 minutes. The active enzyme in rennet is Chymosin which can come from the fourth stomach of an unweaned calf, microbial harvest or fermentation-produced. The enzyme promotes clotting and formation of the curd. Run a long knife in a grid pattern to cut the curd, then return to the heat, bringing the curds and whey to 105F. Let this rest for 5 minutes for the curds to settle out from the whey. Strain the curd and squeeze out the whey. Save the whey in the refrigerator for any of a long list of possible uses. To create the mozzarella ball, pour 170F-180F water over the curd to soften it and make it pliable. Fold the curd over itself like forming a dough into a bun shape. Repeatedly reheat the curd with hot water to keep it pliable. It is ready when the surface is smooth and elastic. Squeeze the ball through your first finger and thumb then pinch the end to form a ball. Store the ball of mozzarella in a brine of salt and water. Enjoy. #rawmilk #mozzarella #homemadecheese #cheese #learntocook

What is the difference between RAW milk and regular, pasteurized milk? 🥛 MOST milk is from cows on factory farms, and this milk must be heated to remove harmful bacteria before being sold in grocery stores… The heating process is pasteurization… In contrast, raw milk is often produced on smaller farms, with more attention to quality control… and it is not heated or blended (homogenized) before consumption… 🤙 This means that the cream rises to the top, as you can see in this reel… Though pasteurized milk (whole milk, why would drink anything else?) contains many nutrients including calcium, K2, riboflavin, stearic acid etc… I prefer raw, unpasteurized milk… 💁‍♂️ Here’s why…. There are multiple studies that show that unheated = raw milk consumption in childhood is associated with lower rates on asthma, eczema, and allergies…👍 Remember that these are kids who grow up on OR off farms… Impressive right? I imagine researchers thought this had something to do with probiotic bacteria in the raw milk vs pasteurized milk at first… But further experiments showed that the benefits of raw milk are probably due to the native (unheated) whey proteins in it, which appear beneficial to the immune system… 👏 Turns out that when you heat whey protein above 65C (160F) it changes shape… and quite possibly can then trigger more immune reactions in humans… Many people feel better when they cut out dairy, but I suspect this may be because pasteurized dairy causes issues for many… If this is you, consider raw dairy as a part of your #animalbased diet or organs (either fresh or @heartandsoilsupplements), meat, fruit, honey and raw diary… Welcome to #theremembering 🏹

Pasteurized milk vs real milk⬇️ Did you know this? Pasteurizing degrades B vitamins along with vitamin C. Not only that it denatures necessary proteins and enzymes used for nutrient absorption. Because they are denatured, your body doesn’t know how to process them and what happens….you get sick. When in reality, real milk has all of the necessary elements in it for digestion. Not to say it’s the answer for everyone but it is definitely an answer they don’t want you to know about. I was so scared of real milk for a long time. I remember sitting in my immunology university class and they taught a whole section on real milk and how scary it is LOL. Finally after doing my own research, I discovered real milk is not so scary and I set out to source it. I remember getting my first gallon from a farmer who traveled four hours once a week to drop off in a parking lot! It was exciting. I have never looked back! Now, I have my own Nigerian dwarf goats who are my main source of real milk + surrounding farmers who keep Jersey cows. I prefer goat milk over cow milk though. Real milk is not inherently dangerous, and I’m glad I learned this. Pasteurization is necessary when coming from feed lot cows who are kept in dirty conditions and have rampant disease…. But it is not necessary when the cows are grazing green grass, drinking fresh water, and have their health maintained. Interesting how the system made pasteurization the norm… So many health benefits from real milk they don’t want you to know about… What do you think? #homestesdinglife #homesteadlife

🥛 From Farm to Table: Our Milking Process 🐮 Ever wonder how our fresh Guernsey milk makes its way from our cows to your glass? It all starts with milking, where we use modern, gentle milking machines. These specially designed machines carefully attach to our cows' udders, mimicking the natural nursing process to collect milk efficiently and comfortably. Each session takes only a few minutes per cow, ensuring our Guernseys stay relaxed and content during the process. #EbyManor #FarmFresh #DairyFarming #LocalDairy #FarmToTable #GuernseyMilk

Did you know there’s 4 types of milk pasteurization? Vat Pasteurization (LTLT - Low-Temperature Long-Time): Process: Heating milk in a large vat to 145-150°F (63-65°C) for 30 minutes. Use: Often for smaller batches, preserving flavor. High-Temperature Short-Time (HTST): Process: Heating to at least 161°F (71°C) for 15 seconds, using plate heat exchangers. Use: The standard for most milk, extending shelf life but requiring refrigeration. Ultra-High Temperature (UHT): Process: Heating to 275-300°F (138°C+) for 2-5 seconds, then filling into sterile, sealed containers. Use: Creates shelf-stable products (no refrigeration needed until opened) by achieving commercial sterility. Ultra Pasteurization (UP): Process: Similar to UHT but often involves heating to ~280°F for 2-5 seconds after packaging. Use: Extends shelf life, but still often needs refrigeration. There you have it. Pasteurizing isn’t scary at all. Just heating up milk to kill bad bacteria and keep your dairy products safe to eat. Can you guess which type of pasteurization we use? What should we ask the cheesemakers next? 👇👇👇 #cheese #artisan #local #michigan #raclette #michiganmade

Hello👋🏾, so the pasteurization process is simply heating of milk at a specified temperature (176 degrees Fahrenheit) within a period of time and this kills all unwanted bacteria in the milk before our fermentation process. This process to a larger extent also affects the texture of yoghurt and well as the taste of yoghurt. 📌WE ARE TAKING ORDERS NOW❗️.
