🌍🍰 Around The World In 80 Cakes – Greek Portokalopita aka Orange Cake 🍰🌍    Next up in this series is a classic Greek Orange Cake - a sweet, syrup soaked sponge made with no flour...just filo. Yes, that blew my mind too. Unsure what sort of sorcery the Greeks are up to over there but this cake is nothing short of magic 🪄     It’s the perfect beginner bake as no stand mixer or electric hand whisk is needed - just a blender, your hands and an oven. Easy peasy, orange squeazy 🍊    This cake is ridiculously YUM. It’s bright, zesty, punchy, JUICYYY, smushy, squidgy and utterly delightful. If you love cakes like a lemon drizzle or anything citrussy, you will ADORE this one.    I used Akis Petretzikis recipe as a base - which is very good - but altered the quants to suit the tin I was using, reduced the shugs (cause there’s A LOT of it) and added a bit of jazz with the orange slices on top. He has a recipe video if you are after a more guided step by step than my super speedy vid.     To give it a go, you will need:    • Syrup  525 g Caster Sugar  400 g Water  240 g Orange Juice (I used fresh but carton will also work)  • Base  450 g Filo, sheets  3 Large Oranges, whole  3 Large Oranges, zest only  175 g Caster Sugar  250 g Vegetable Oil  250 ml Whole Milk  3 Large Eggs  1 tsp Baking Powder, sifted  1 tsp Bicarbonate of Soda, sifted  2 tsp Vanilla Bean Paste or 1 tsp Vanilla Bean Powder  Handful of Demerara Sugar  • To Serve  Vanilla Ice Cream  Fresh Mint Leaves, finely chopped    You can find a brief method in the pinned comments below 👇🏽 or sliding into your inboxes this thursday in my newsletter.     How am I feeling sad that we are coming up to being nearly halfway done? Recipe: Ingredients- 1 large sweet onion, finely chopped 10 potatoes, boiled and peeled 1 teaspoon of salt 1/2 teaspoon of black pepper 1 teaspoon of turmeric 1/4 cup of olive oil Phyllo pastry dough sheets (2 rolls 9x14 inch) 16 oz 454g Spray of olive oil or avocado oil Topping- Nigella seeds Method- 1. Preheat the oven to 400F / 200C 2. In a skillet pan on medium heat pour the olive oil. add the chopped onion, salt, pepper, and turmeric. 3. Sauté and stir it all for 2 minutes. 4. Add the boiled potatoes and mash them with a potato masher. Mix it all to a smooth mixture. Let it cool for 15 minutes. 5. Take an oven safe pan and spray olive oil on the bottom of the pan. 6. Take one phyllo dough roll. Crinkle-fold one phyllo sheet at a time, and cover the bottom of the pan. 7. Spread the potato mixture evenly on top of the phyllo and make sure everything is covered. 8. Take the second roll of the phyllo dough and roughly crinkle-fold the fillo sheets on top. 9. Generously spray olive oil on top of all and sprinkle nigella seeds. 10. This creamy, crunchy, Kunafe-inspired crinkle cake is everything. 🤤✨ @threecupsofchai Kunafe-Inspired Crinkle Dessert Recipe   12 sheets of phyllo pastry 250g fresh mozzarella, 50% moisture 3/4 cup salted butter, melted Custard: 2 large eggs 1 cup milk 3/4 cup sugar ½ Tbsp rose water ½ Tbsp orange blossom water Syrup: 1/2 cup water 1 cup sugar ½ Tbsp rose water ½ Tbsp orange blossom water 1 tsp lemon juice Garnish crushed pistachios dried rose petals   Directions: Preheat your oven to 350°F   Divide the cheese into 6 portions, roughly shred.  Using layers of phyllo at a time, add one portion of cheese to the long edge of the phyllo.  Roll until the cheese is covered.  Crinkle the rest of the pastry like a fan.  Place into a 9x13 baking dish. Bake for 10 minutes. Place the custard ingredients in a bowl, whisk to combine and set aside. Remove from the oven and pour over the melted butter.  Bake for another ten minutes. Remove from the oven and pour over the custard.  Bake for 35 to 45 minutes, until golden brown. Make the syrup: combine all the ingredients and simmer on medium low heat until the syrup is sticky and slightly thickened. את זה אתם חייבים אבל חייבים להכין!! נתחיל מזה שתשמרו מתכון👇🏻 וכמובן גם תשתפו כי למה לא בעצם? 😎 מאפה פילו במילוי פודינג סולת מתוק וטעים😋 קראנצ׳י מבחוץ ונימוח מבפנים במתיקות מעודנת שאי אפשר להפסיק לאכול🤤 המתכון הזה דיי ישן באתר שלי, שם תמצאו אותו בגירסה של עוגה שלמה פרוסה למשולשים. הפעם הכנתי אותו כמשולשים אישיים מתוקים וטעימים😋 . מאפה פילו במילוי פודינג סולת /קראנצ’ית: לעטיפת הקראנץ: חבילת עלי פילו 80 גרם חמאה מומסת לפודינג: 500 גרם חלב 1 ביצה L 75 גרם סולת 100 גרם סוכר לבן 2 סוכר וניל או כפית מחית וניל איכותית לסירופ סוכר: כוס סוכר- 200 גרם כוס מים- 240 מ”ל 1 פרוסת לימון לקישוט(אופציונלי): פיסטוק טחון דק- בערך 50 גרם הכנה: לפודינג- לשים בסיר חלב,ביצים,סוכר,וניל ולערבב יחד,לחמם יחד על הגז, כשמתחיל להראות סימנים של רתיחה להוסיף את הסולת ולערבב כל הזמן,לא להפסיק לערבב עד שהתערובת מסמיכה. כל זמן שהחומרים על האש אתם לא מפסיקים לערבב. (בסירטון הכמות היא כפולה, אין צורך שאתם תכפילו עבור מתכון זה). כאשר התערובת מסמיכה, מורידים מהאש ומכסים בניילון נצמד (כאשר הניילון הנצמד נוגע בפודינג עצמו כדי למנוע היווצרות של קרום או התייבשות לקרם), להכניס את התערובת של הפודינג למקרר ל 20 דקות. הכנת סירופ הסוכר-לשים את כל המצרכים בסיר קטן על הגז ולבשל כ 10 דקות תוך כדי ערבוב מידיי פעם. להרתיח ואח”כ להנמיך ולבשל את הסירופ. הרכבת הקינוח: לפתוח את בצק הפילו מהאריזה שלו ולהשאיר אותו כשכבות, לא להפריד. לחתוך את הבצק לריבועים שווים כך שבכל ריבוע יש מתחתיו כמות ריבועים כשכבות העלים של הבצק (תראו בסירטון). בתוך כל חבילת ריבועים לשים מלית ולקפל לצורת משולש (ראו סירטון) ולהניח בתבנית מסודרים יפה כמו בסירטון. להמיס חמאה ולשפוך על משולשי הבצק הממולאים שבתבנית. להכניס לתנור שחומם מראש ל 180 מעלות לאפיה של כ 40 דקות או עד שהעלים זהובים ופריכים. כשמוכן להוציא את התבנית מהתנור ומיד לשפוך סירופ סוכר (לא חייב הכל, תראו שזה ספוג מספיק). לקישוט פזרו בקצה מעט מהפיסטוקים הגרוסים. בהצלחה ובתיאבון,אתי. . לעוד מתכונים תעקבו @etimoshehaviv_crunchit ❣️ . המתכון שמור באתר קראנצ׳ית, קישור בביו וגם כאן: https://crunchit.co.il/מאפה-פילו-במילוי-פודינג-סולת/ . 🦋💕🦋💕🦋💕🦋💕🦋 . . . . . . . . . . #פילו #סולת #פודינגסולת #מתכונים #phyllo

CRISPY AIR FRYER FETA PHYLLO BITES✨ Looking for an easy springtime appetizer? I’ve got you covered with my CRISPY Air Fryer Feta Phyllo Bites that are little pillows of deliciousness! This recipe is super easy to make and I love making it in my air fryer to make them extra crispy! The star of this recipe is @TreStelleCheese Traditional Feta, which is made with 100% Canadian dairy. I always keep Tre Stelle Feta in my fridge since I can use it for a variety of different dishes and recipes! Find the recipe below, enjoy xx #ad #TreStelle IB: @madeofsugarandsaffron Crispy Air Fryer Feta Phyllo Bites Serves 4 Ingredients 3 Phyllo Dough Sheets 1 container Tre Stelle Feta Cheese 2 tbsp honey 1 cup olive oil ½ cup sesame seeds Fresh dill, chopped Directions Slice Tre Stelle Feta into 1 cm cubes. Set aside. Layer 3 phyllo dough sheets. Before layering, cover each sheet with olive oil. Once you’ve added the third sheet of phyllo, add feta cheese to the sheet. Make sure to space it out, since we will be cutting them into squares. Once feta is added to the phyllo sheet, cut the sheet horizontally and vertically to create squares around each block of feta. To make the bites, fold each corner of phyllo into the center (covering the feta) and repeat until the feta cube is completely covered. Brush each phyllo feta bite with olive oil and set aside. Add sesame seeds to a small bowl and dip one side of the phyllo bites into the sesame seeds so the top is covered. Repeat Add to an air fryer and bake at 375F degrees for 12 minutes. Hot, crunchy, gone in minutes 🍤✨ Ingredients Dill Aioli • 1 egg yolk (room temp, free-range) • ½ small garlic clove, finely grated • 5g Dijon mustard • 15ml lemon juice (plus extra to taste) • 120ml light olive oil (or 60ml olive oil + 60ml neutral oil) • 6g finely chopped fresh dill • ¼ tsp caster sugar • Salt & cracked black pepper, to taste Whisk egg yolk, garlic, mustard, lemon juice & sugar until smooth. Slowly drizzle in oil while whisking until thick. Stir in dill, season, and let sit for 10 minutes. Kataifi Prawns (Serves 4) • 200g kataifi pastry, at room temp • 500g large prawns, peeled & deveined (tails on) • 80g unsalted butter, melted • Extra virgin olive oil, for frying • Fresh dill & lemon cheeks, to serve Loosen the kataifi and keep it covered with a damp towel. Take 12g of pastry, lay it in a strip, drizzle with butter, then wrap a prawn, squeezing gently to secure. Heat 5cm deep EVOO in a saucepan over medium heat. Fry prawns in batches for 4–5 minutes until golden. Drain on paper towel. Serve hot with fresh dill, lemon cheeks & that dangerously good aioli. #kunafa #filo #phyllo
