Feta & Pistachio Phyllo Bites ❤️ they are so good + easy to make! These yield 12 bites! These were inspired by the rolled crispy phyllo by @lilygbakes Ingredients: * 1-16 oz package phyllo (18 sheets). * 8 oz feta (slice lengthwise into long rectangles). * 8 oz butter (melted, you might have some leftover). * 1/3 cup fig preserves. * 3 tbsp chives (chopped). * 1/4 cup chopped pistachios. * Honey to taste (about 1/2-1 tbsp per bite). * Chipotle powder to taste (I did about 1 tsp). * Salt and pepper to taste. Directions: 1. Fold your filo in half lenghtwise and then cut. Roll the half back up in the plastic it comes in and store for later use. 2. Add some melted butter in between a couple of the filo sheets. I did about 2-3 tbsp of melted butter. 3. Spread the fig jam onto the filo, add the pistachio, chives, chipotle powder, salt and pepper. 4. Add the feta rectangles at the edge of the filo sheets along the wider side of the sheets and roll it up really tightly. 5. Slice into 12 rounds with a sharp knife. 6. Add 1/2 tbsp of butter to the bottom of a 12 muffin tin. 7. Add the filo bites onto the muffin tin and add 1/2 tbsp butter on top of each one. 8. Bake at 400F for 20-25 min or until golden. 9. Cranberry Feta Phyllo Bites - phyllo dough - feta cheese - cranberry sauce - pecans - sage - chives - melted butter @nancysyogurt 1. Add melted butter to every 2-3 sheets of phyllo dough. Work fast so phyllo doesn’t dry. You’ll need to repeat this for about 3-4 times or until you have used the 1 package of phyllo or at least 18-20 sheets. 2. In a small sauce pan, add 2 tbsp butter, sage and pecans. Stir frequently so they don’t burn. You want them to be slightly toasted, but don’t burn the sage. 3. Spread cranberry sauce. Top with pecan and sage mixture. Add chives and feta cheese. Roll the dough tightly. Cut into 12 rounds. 3. Add melted butter on bottom of each muffin pan, add the phyllo bite, top with more melted butter. 4. Ingredients: * 1-8oz package phyllo (Athens) * 8 oz gruyere (always Emmi). * 6 oz melted unsalted butter (Kerrygold). * 3 tbsp chives (chopped). * 1/4 cup chopped toasted almonds. * Honey to taste (about 1/2-1 tbsp per bite). Directions: 1. Take 1/2-1/3 of the phyllo sheets and roll the rest in the plastic wrap to save. 2. Add some melted butter in between a couple of the filo sheets. I did about 2-3 tbsp of melted butter. 3. Add the grated gruyere to the phyllo sheet, all across. 4. Roll it up really tightly. 5. Slice into 12 rounds with a sharp knife. 6. Add 1/2 tbsp of butter to the bottom of a 12 muffin tin. 7. Add the filo bites onto the muffin tin and add 1/2 tbsp butter on top of each one. 8. Bake at 400F for 20-25 min or until golden. BAKED FETA-PHYLLO STICKS With Toasted Sesame & Honey Drizzle Makes 12 If you’ve ever had feta me meli in a Greek restaurant, you know how good it is! In the classic version a generous slice of feta is wrapped in phyllo, brushed with olive oil, sprinkled with sesame, baked until crispy, then lavished with honey–you know it’s one irresistible dish. Here, I sized the recipe down into individual sticks, which makes them perfect finger food–or first course served alongside a small salad. Firmer feta keeps all the cheese inside the phyllo, but don’t fret: if you use a softer cheese and some oozes out and caramelized on the pan while baking, you’re only winning. I add black sesame seeds and a hint of spice (because don’t you know me by now???). Of course, these are ideal for the upcoming Jewish holiday of Shavuot, where dairy foods are front-and-center.  3 sheets phyllo, defrosted an 8- to 9- ounce block (NOT crumbled) firm feta cheese, patted dry 3-4 tablespoons olive oil 1-2 TB black sesame seeds 1-2 TB white sesame seeds Honey and flaky salt, for drizzling Chili flakes (optional)   Preheat the oven to 350°F.  Cut the feta into ½ inch-thick planks, then into about 12 ½-inch-thick sticks Keep the three sheets of phyllo covered with a towel. Arrange one sheet of phyllo on a clean work surface and brush lightly with olive oil. Using a pastry cutter or scissors, cut the sheet lengthwise, then crosswise, into four equal-sized rectangles. Arrange a feta stick on the top third of each rectangle and roll it, folding the sides in burrito-style.  Arrange on a parchment lined baking sheet and repeat with the remaining phyllo and Feta. Brush with more olive oil, sprinkle with black and white sesame seeds, and bake until crisp and golden, 15 to 20 minutes. Drizzle generously with honey and sprinkle with flaky sea salt.

CRISPY PHYLLO STUFFING ROLLS Full recipe is in this week’s Substack STT 58, linked through my Linktree in bio. Crisp, buttery filo wrapped around sausage meat, dried cranberries, toasted pecans and little pockets of brie, baked into chunky, golden rounds in a muffin tin. They are perfect- I am obsessed. The stuffing is mixed first, then the brie is folded through gently so it stays in distinct, melty pieces when baked. The filo gets layered with butter and olive oil, rolled up around the stuffing into a thick sausage, sliced, and baked until deeply crisp all the way round. They reheat beautifully, which makes them ideal for hosting, but they do need to be baked first. Uncooked filo dries out fast. Once cooked, though, they’re sturdy, crunchy, and disappear quickly. A very good canapé or side. Impressive, easy to make and versatile Enjoy x

Recipe ⬇️💝 250g Filo / Phyllo Pastry 200 - 250g Halloumi 100g grated or sliced mozzarella (or another semi hard melty cheese like Edam) Chilli Jam (or any other kind of jam or chutney or honey) 60ml olive oil Sesame seeds Honey for drizzling I used the thick sheets of filo and cut them to make 4 little pieces in each parcel but if you’re using thin baklava pastry you may want to use 6 in each. Cut your halloumi vertically down the middle then each side into 6 to create 12 little pieces, place on a paper towel to get rid of moisture (you can pat them down too) If you’re using slices of cheese cut them into the same size and layer them to create a little block like I did (I used slices of mozzarella) Preheat your oven to 180C Brush your cupcake tin generously with olive oil at the bottom and around the sides. Take 6 sheets of filo, cut in half, place on top of each other then cut in half vertically, place on top of each other then cut in half horizontally. This will create 48 little sheets. 4 in each cupcake case for a dish of 12. Place 4 little sheets overlapping each other in a star shape into your mould pushing them down, brush the inside with olive oil, add some chilli jam followed by your cheeses. Using your hand and the brush close them down (they won’t close fully) and brush with more olive oil. (Work as fast as you can the filo dries up quickly and cover the sheets you aren’t using with a tea towel) sprinkle with sesame seeds and bake on a low shelf for 20-25 until golden and crispy. Cooking time will depend on your filo so keep checking. Sprinkle with honey as soon as they’re out of the oven. Enjoy D 🫶 #partyfood #easyrecipes #puffpastry #halloumi #canapé #appetizers
