Pineapple Vinegar
Ingredients:
Stage 1:
peels from 1 pineapple
1 L water
120 g sugar
Stage 2:
pulp leftover from the fizzy drink
1 L water
100 g sugar
Preparation Process:
1. Wash the pineapple peels thoroughly. Tear them into small pieces. Put them in a large glass jar, add sugar and water, and stir. Cover the jar with cloth and leave in a warm place for 3–4 days.
2. Stir daily.
3. Remove the pineapple peels and add the ground pulp left over from the fizzy drink. These leftovers provide extra bacteria and give the vinegar a pleasant flavor.
4. Add more sugar water (1 L water + 100 g sugar). Let it ferment for a few more days.
5. Once the fermentation slows down (about 3 days), remove the pulp and leave the vinegar covered with cloth for 1 month.
