This is the perfect pizza dough for beginners. If you don’t have a pizza oven or stone you need to try this frying pan method for the crispiest base and the fluffiest crust. (makes 4 small or 2 large) 350ml lukewarm water 7g instant yeast Squeeze honey (about 1 tbs) 500g Strong / Bread flour 1 x tbs salt Add water to the bowl and mix in the yeast, add honey and mix again. Add the flour and salt and mix well till combined. Cover and rest 30 min. After 30 min wet your hand and do 4 stretch and folds (you can wet your hands in between each fold) cover and rest 30 min After 30 min repeat 4 stretch and folds and cover and rest for 1 to 1.5 hours. Flour the work surface generously and the top of the dough and turn it out. It may take a minute or 2. Sprinkle a little flour on top of the turned out dough and cut into 4 portions or 2 if you want them big. Slightly stretch each piece and fold them inwards to create a round shape. Pinch the top closed turn them over and shape into a ball. Add to a heavily floured dish, sprinkle more flour on top (a lot so they don’t stick) cover with a damp towel for 45 min. If you want to prepare the night before you can cover airtight at this stage and before resting and store in the fridge. Once ready heat a frying pan with some olive oil and turn your grill to high. Shape the dough gently stretching it out. Make sure both the frying pan and the grill are really hot. Add your pizza dough to the pan and drizzle and brush some olive oil around the edges. Once the dough starts puffing up add the toppings and check the base is coloured and crunchy. (This will take 5-7 min) transfer to your grill (top shelf) or another 6-8 min until cooked. If you want to cook in the oven heat to maximum temperature with your baking dish inside, transfer the pizza to the hot dish and cook till ready. Enjoy D 🫶 #pizza #pizzarecipe #pizzadough #homemade

FREEZER FEBRUARY day 2/28: Pizza Dough 1 1/3 cup warm water 2 1/4 tsp active dry yeast 1 Tbsp sugar 3 cups flour 1 tsp salt 2 Tbsp oil Garlic powder Onion powder Italian seasoning 1. Sprinkle yeast onto warm water in bowl with 1 Tbsp sugar. Let sit until foamy (about 10 min) 2. Mix rest of ingredients in separate bowl. Once yeast is foamy and activated, combine bowls and mix. 3. Turn dough out onto clean, floured countertop and knead until smooth, about 5-10 minutes. 4. Once smooth, put into oiled bowl. Roll dough in oiled bowl so dough is coated in oil. Cover bowl in plastic wrap and set on countertop until it doubles in size (about 1.5 hours). 5. After dough has doubled in size, divide dough in half and roll out into pizza shape. 6. Put toppings on, no need to pre-bake, and bake on 450* for 15-20 minutes. 7. If baking from frozen, simply defrost dough before and then follow steps above. Defrost on countertop for a few hours or in fridge overnight.

This is my go to recipe that you may have seen before. Very versatile, forgiving, and flat out delicious. It is 48-72 hours of total fermentation. Recipe and tips below! For two-14 inch pizzas: -400g flour - 280 bread flour/120 AP flour -260g water (65%) -1.2g yeast (.3%) -10g salt (2.5%) -8g oil (2%) -8g sugar (2%in home oven or .5% higher heat oven) TIPS: -I Ball the dough the day before pizza. But you can ball 3-5 hours on the day of making pizza as well. -I typically use @kingarthurbaking flours and Fleischmann INSTANT dry yeast. -If you don’t like sugar, then don’t use it. I just like the coloring it provides. Or you can use honey or non diastatic malt powder. -The goal of cold water is to manage the dough temperature throughout the process. Higher temp doughs during mixing can overproof faster. -If using a mixer, I recommend adding crushed ice. -When mixing, I always “under mix” so we can perform some stretch and folds to build gluten. #pizza #dough #tutorial

What does the inside of pizza dough look like? 🕸️🧐 *Direct method dough after 13 hours at room temperature. 👇🏻 How I make it: 65% hydration (4 dough balls, ~275g each) 🔘 670g “00” flour 🔘 435g tap water 🔘 0.5g instant dry yeast 🔘 17g salt Step 1: Mix the flour and yeast together before adding the water. Then, gradually add the water little by little until fully incorporated. Take the dough out of the bowl and knead for about 10 minutes. After 10 minutes, add the salt to the dough ball. At this point, I sometimes add a few drops of olive oil to help with the final mix. Knead for another 5 minutes until the salt is completely dissolved. Shape the dough into a ball, cover it with the bowl, and let it rest for about 20 minutes. After that, form the final dough ball, place it in a container coated with olive oil, cover it with a wet cloth, and put the lid on (without sealing it tightly). Let it rest for about 10 hours at room temperature (20°C). Step 2: After 10 hours, the dough should have tripled in size. Divide it into four equal portions and shape them into dough balls. Place each ball in a separate container (coated with a thin layer of olive oil), and refrigerate for at least 24 hours. You can take them out earlier or even after a few days. Find what works best for you. Step 3: When you’re ready to make pizza, take the dough out and let it come to room temperature for around 3 hours. It’s important that the dough isn’t cold so it stretches more easily. Step 4: Once you’ve stretched the dough, top it with all your favorite ingredients! Watch it closely so it doesn’t burn! 🍕A few notes on the timeline… Yes, this pizza dough takes time. Yes, it’s worth it. There are plenty of pizza doughs out there that are done within two hours but you will be able to taste the difference. 🍕If you’d like to condense this process into one day, here is how: First the morning, mix the yeast mixture with warm (40C/105F) water. Let puff up at room temperature for 2/3 hours. Mix dough as instructed in tutorial but leave it resting in the bowl for an additional hour before shaping into dough balls. Then carry on with the recipe as normal. This means that if you mix the yeast mixture by 9am you will have delicious pizza dough in time for dinner.
