IRMy viral hack for Christmas veg! 🎄
Blanching vegetables is a great way to reduce cooking time.. which is amazing because the oven is in hot demand Christmas day! Plus the less time I have to be in the kitchen on the day itself, the better!
Blanching times:
Carrots & parnips - 10 mins
Brussel sprouts - 5 mins
Once everything is cool we can cover and pop into the freezer until we need them. I take them out the day before, defrost in the fridge and then add some flavour and cook them in half the time on the day.
I’ve added fresh rosemary and thyme to the carrots and parsnips which I’ve roasted, and halfway through I added some honey.
The Brussel sprouts were fried in the same herbs, some garlic purée and you could also add pancetta.
Hope this helps take some of the hassle out of the big day itself, so that you can have a stress free enjoyable Christmas!
