FOHandi chicken 🍗 champaran style
Ingredients
• 500 g chicken
• 1 large onion, sliced
• 1 medium tomato, chopped (optional but helps gravy)
• 1 whole garlic
• 3–4 green chilies
• 4 tbsp mustard oil
• 1 tsp turmeric
• 1.5 tsp red chili powder
• 1 tsp coriander powder
• 1 tsp cumin powder
• 1 tsp garam masala
• 1 tsp crushed black pepper
• 1 tsp Chicken masala
• Kasuri methi
• Whole spices: 2 bay leaves, 1 small cinnamon, 3 cloves, 2 cardamom, 6 whole black pepper, 2 dry red chilli, cumin seeds
• Salt as test
Steps
1. Prep the handi
Heat the mustard oil in the handi until it smokes lightly. Turn the flame low.
2. Add whole garlic and spices.Let them release aroma.
3. Add onions Cook till onions turn soft and lightly golden.
4. Mix in puree of tomato,ginger, garlic, green chilli and cook for few seconds
5. Add spices and salt. Cook for a minutes and add kasuri methi
6. Add chicken pieces and mix well so the chicken absorbs the masala.
7. Add 1 cup water mix well
8. Dum cooking seal with dough for proper Champaran flavor.
Cook on low heat for about 30–40 minutes. Don’t open the lid in between.
9. Finish
Open the handi, stir gently
10. Garnish
Add coriander and give it a final mix.
Serve with rice, roti or litti
